Spicy Rosemary Cashews Recipe
Homemade roasted nuts make entertaining a little more special. They're also great for a snack or road trip. If you like it sweet and spicy, you will love these spiced cashews.
Full Recipe + Ingredients:
3/4 pound raw unsalted cashews
1 tablespoon hot water
1/2 tablespoon butter
1/4 cup brown sugar
1 tablespoon sea salt
1 teaspoon chili powder
2 tablespoons minced rosemary
Pre-heat the oven to 350 degrees F.
Pre-roast cashews: spread the cashews onto a parchment-lined baking sheet in an even layer and roast them for about 15 minutes, until they show a little color. Then transfer the nuts to a large mixing bowl, reserving the paper.
Finely chop the rosemary if you haven’t already.
Melt the butter in a small saucepan. Add in the hot water and brown sugar. Bring the mixture to a low simmer to combine them, careful not to over stir.
Turn off the heat but leave the pan on the burner and mix in the following: chili powder, salt (unless the cashews you are using are salted), and freshly chopped rosemary.
Add the sauce to the mixing bowl with the toasted cashews and quickly toss them until they are evenly coated.
Transfer the coated cashews back to the baking sheet with parchment paper and bake them for another 6 minutes.
Remove them from the oven and let cool for 20 minutes and seal them in an airtight container.
They will last about 3 weeks stored this way.

Betty's Spicy Toasted Cashews
Betty demonstrates how to make Spicy Toasted Cashews. These are whole cashew nuts mixed with a mixture of sugar, butter, salt, red pepper, and Worcestershire sauce. They are baked for a few minutes and then sprinkled with sugar to make a crunchy delight.
Spicy Toasted Cashews
2 cups whole cashews (If your cashews are already salted and roasted, reduce the salt and baking time.)
1/8 cup sugar
2 tablespoons butter, melted
½ teaspoon salt
1/8 to ¼ teaspoon ground red pepper, depending on how hot you want them
2 teaspoons Worcestershire sauce
½ tablespoon sugar (In the video I said ½ teaspoon sugar, but it should be ½ tablespoon sugar.)
In a large bowl, stir together 2 cups whole cashews, 1/8 cup sugar, 2 tablespoons melted butter, ½ teaspoon salt, 1/8 to ¼ teaspoon ground red pepper, and 2 teaspoons Worcestershire sauce. (Reduce the salt, if your cashews have already been salted.) Spread in a lightly greased 13-inch by 9-inch by 2-inch Pyrex dish or baking pan. Bake at 350 degrees (F) for 8 to 10 minutes, stirring once or twice during baking. (Bake only about 8 minutes, if your cashews have already been roasted.) Spread cashews on waxed paper to cool. Sprinkle cooled nuts with ½ tablespoon sugar. Pour into a nice serving bowl and serve when desired. You may store these for a couple of weeks in a jar with a screw-on lid, or in a Ziploc bag.
