How To make Spicy Fried Cashews
1/2 lb Raw cashews
1 c Oil, preferably peanut
1 ts Salt
1/2 ts Freshly ground black pepper
1/2 ts Chili powder
1/4 ts Five spice powder
HEAT A WOK OR LARGE DEEP PAN until it is hot, then add the oil. When the oil begins to smoke lightly, deep-fry the cashew nuts for 2 minutes or until they begin to turn lightly brown. While the cashew nuts are browning, start another frying pan heating. Remove the nuts from the oil with a slotted spoon and add them directly to the frying pan. HINT: Take the cashew nuts out of the oil when they are lightly browned as they continue cooking even after they are taken out of the oil. Save the oil in which the nuts have been cooked, as it can be used again. Add the salt, pepper, chili powder and five spice powder and stir-fry for 2 minutes or until the cashew nuts are well coated with the spice. Allow to cool and serve with drinks. -----

Easy Oven Roasted Cashews!
Roasting cashews brings out their soft, sweet flavor and adds a little extra crunch in the process. You can easily make roasted cashews in your home oven.

INGREDIENTS:
• 1 cup raw whole cashews or cashew pieces
INSTRUCTIONS:
1. Preheat your oven to 350°F (177°C) and spread the cashews out in a single layer on a baking sheet.
2. Roast them for about 10-15 min, but don't wander off! Give them a stir every now and then to make sure they don't burn. Keep a close watch because oven temperatures can be different. You'll know they're ready when they turn a lovely golden brown and you can smell that delightful nutty aroma. If you detect any burnt smell, take them out right away.
3. Once they're done, let the roasted cashews cool down completely.
4. Enjoy them as a snack or use them as a crunchy topping for cereals, salads, and more.
5. To keep them fresh, store them in an airtight container (see notes for more info).
NOTES:
Roasted cashews will be the most aromatic and crunchy during one week. This is the best time to enjoy them as a snack. After one week roasted cashews will still be fresh, and you can use them as an ingredient for cashew butter, cashew pesto, baked goods, or as topper for salads and cereals. We recommend to store roasted cashews in an airtight container in a cool dry place away from direct sunlight or humidity. Refrigerating or freezing will extend their shelf life.

Spicy Rosemary Cashews Recipe
Homemade roasted nuts make entertaining a little more special. They're also great for a snack or road trip. If you like it sweet and spicy, you will love these spiced cashews.
Full Recipe + Ingredients:
3/4 pound raw unsalted cashews
1 tablespoon hot water
1/2 tablespoon butter
1/4 cup brown sugar
1 tablespoon sea salt
1 teaspoon chili powder
2 tablespoons minced rosemary
Pre-heat the oven to 350 degrees F.
Pre-roast cashews: spread the cashews onto a parchment-lined baking sheet in an even layer and roast them for about 15 minutes, until they show a little color. Then transfer the nuts to a large mixing bowl, reserving the paper.
Finely chop the rosemary if you haven’t already.
Melt the butter in a small saucepan. Add in the hot water and brown sugar. Bring the mixture to a low simmer to combine them, careful not to over stir.
Turn off the heat but leave the pan on the burner and mix in the following: chili powder, salt (unless the cashews you are using are salted), and freshly chopped rosemary.
Add the sauce to the mixing bowl with the toasted cashews and quickly toss them until they are evenly coated.
Transfer the coated cashews back to the baking sheet with parchment paper and bake them for another 6 minutes.
Remove them from the oven and let cool for 20 minutes and seal them in an airtight container.
They will last about 3 weeks stored this way.
