How To make Spicy Pork with Peas
1 ts red pepper flakes
1 ts Szechuan peppercorn ground
: (optional) 1 TB cornstarch
3 c fresh or canned chicken
: stock or broth 2 ts sesame oil
3 c soy sauce
2 TB oyster sauce
2 ts sugar
3 TB vegetable oil
2 lb pork, sliced and
cut into
: thin strips 1 onion, :
halved and sliced
4 garlic cloves, -- peeled and
: chopped 4 quarter-size slices fresh
: ginger, julienned 2 carrots, :
julienned
5 green onions, sliced on the
: diagonal 2 c frozen green peas, thawed,
: or fresh uncooked 2 c cooked rice
2 TB chopped fresh parsley
: (optional) 2 canned plum tomatoes or 1
: md fresh tom :
chopped In a small bowl, mix together the red pepper flakes, Szechuan pepper, cornstarch, chicken stock, sesame oil, soy sauce, oyster sauce, and sugar. Set aside. In a large skillet or wok heat 2 tablespoons of the oil over high heat until quite hot. Add the pork and cook quickly, tossing until brown all over, about 3 to 4 minutes. Remove to a platter. Add the remaining 1 tablespoon of oil, then the onion, garlic, ginger, and carrots and quickly saute until crisp tender, another 2 to 3 minutes. Add the seasoning mixture to the
vegetables and stir until the sauce begins to boil and thicken. Add the pork and peas to the pan and heat thoroughly, about 1 minute. Serve over steaming rice. Marinate for Pork

500g pork
1/2 teaspoon of baking soda
2 teaspoons of tapioca flour (or corn flour)
1 tablespoon of light soy sauce
Ginger juice from 2 inch size grated ginger (spread grated ginger over the pork after 'juicing' them)
A few dashes of white pepper
Gravy for pork
------------------
1 thumb size sliced ginger
2 cloves of chopped garlic
3 pieces of spring onion / scallions
2 tablespoons of dark soy sauce
2 tablespoons of oyster sauce
1 cup of water
1/2 teaspoon of sugar
Some tapioca starch solution (or cornstarch solution)
1/2 tablespoon of sesame seed oil
1 tablespoon of Shaoxing Hua Tiao wine / Chinese cooking wine
Jaeyuk Bokkeum / Spicy Pork Bulgogi by Chef Jia Choi
This classic Korean spicy pork stir fry can be introduced as spicy pork bulgogi. The traditional recipe is to slice the meat thinly, marinate it in gochujang sauce and then stir fry it. As a result of testing this menu several times, I found that I like the meat stir- fried or grilled first and then mixed with the sauce. If you are looking for a spicy pork barbecue, you will love this recipe. For outdoor barbecue, prepare the meat a bit thicker than stir fried ones-1.3cm( half inch) thick pork shoulder or pork belly would be perfect.

Jaeyuk Bokkeum / Spicy Pork Bulgogi
Ingredients
- 450g pork shoulder, 0.3cm thick, cut into big bite size pieces
- 1 medium onion, sliced
- 3 stalks scallion, chopped, white part for sauce, green part for garnish
- 1 teaspoon cooking oil
Sauce
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 2 tablespoons gochujang
- 2 tablespoons soy sauce
- 2 tablespoons rice wine(or dry white wine)
- 1/2 tablespoon brown sugar
- 1/2 teaspoon ground black pepper
- 1 tablespoon sesame oil
- 1 tablespoon gochugaru(Korean chili flakes)
- 1 tablespoon white part green onion
Instructions
1. Slice onion. Chop green onion. Mince the garlic and ginger.
2. In a bowl, combine all sauce ingredients. Mix well.
3. Prepare sliced pork in 0.3 centimeter thick. Cut the meat into big bite size pieces.
4. Heat the pan over medium to medium-high with 1 teaspoon of oil in a pan.
5. Place the meat in pan. Cook it golden brown on one side. Remove excess oil using paper towel-or drain oil from the pan. Add sliced onion to the pan and stir fry until translucent.
6. Lower the heat. Pour 2/3 of sauce and thoroughly mix. Cook for 3 minutes.
7. Taste and add more sauce if needed.
8. Serve hot or warm.
