Szechuan Chicken | sweet and spicy chicken recipe
Szechuan chicken comes from Sichuan in China and is meant to be pretty spicy. Szechuan cuisine is known for using strong flavours and especially Szechuan peppercorns, which have a very distinct and have a numbing effect. We recommend using them in this dish, but if you can't find them black peppercorns can be used, Most of the heat comes from the chiles so if you're sensitive to heat, feel free to cut back on some of them.
Ingredients:
1/4 cup vegetable oil
1 pound boneless skinless chicken breasts cut into 1 inch pieces
1/4 cup corn starch
1/2 cup yellow onion cut into 1/2 inch pieces
1 red bell pepper cut into 1 inch pieces
1 green bell pepper cut into 1 inch pieces
6 dried red chilies
1 tablespoon sichuan peppercorns
1 1/2 teaspoons minced garlic
1 teaspoon minced ginger
salt and pepper to taste
For the sauce
3 tablespoons low sodium soy sauce
1 1/2 tablespoons hoisin sauce
1 tablespoon sesame oil
1 1/2 tablespoons brown sugar
1 tablespoon corn starch
1/4 cup chicken broth
Place the chicken in a bowl with the corn starch and salt and pepper to taste. Toss to combine. Heat the vegetable oil in a large pan over high heat. Place the chicken in a single layer in the pan. Cook for 3-4 minutes per side until golden brown. You may have to do this step in batches.Remove the chicken from the pan. Cover to keep warm.Add the onion and red and green bell peppers to the pan. Stir in the chilies and sichuan peppercorns. Cook for 3-4 minutes or until vegetables are softened.Add the garlic and ginger to the pan; cook for an additional 2 minutes. Return the chicken to the pan with the vegetables
While the chicken and vegetables are cooking, make the sauce. Whisk together all of the sauce ingredients in a small bowl.Add the sauce to the chicken mixture and bring to a boil; cook for 30 seconds to 1 minute, or until sauce is just thickened. Serve immediately.

Ingredients:
600 gm Chicken Boneless
1 & 1/2 tbsp Vinegar
6 tbsp Corn flour
1 tsp Black Pepper Powder
1 Egg
Cooking oil (as needed)
1 tbsp Garlic paste
1 tbsp Ginger Paste
4 Whole Red Chili
3 Green Chili
1 & 1/2 tbsp Chili Paste
Salt (as needed)
2 tbsp Soy Sauce
4 tbsp Ketchup
1 tbsp Sugar
¼ tsp Red Food Color
½ cup Chicken Stock
Instructions for Schezwan Chicken Recipe
1- In a bowl, add chicken, salt, vinegar, corn flour, soy sauce, black pepper powder, egg and mix it well.
2- Keep in the refrigerator for an hour. After that fry it in the cooking oil until golden brown.
3- In a cooking pan, add cooking , garlic paste, ginger paste, whole red chili, green chili and cook for 2 minutes.
4- Now add, chili paste, fried chicken, salt, soy sauce, ketchup, sugar, vinegar, black pepper powder and cook for 2-3 minutes.
5- Now add, chicken stock, corn flour (mixed with water) and cook until thickend.
6- Your tasty Schezwan now ready Serve with Boiled Rice.

Szechuan chicken recipe (辣子鸡) - How to prepare the best spicy chicken like restaurant
Today I want to introduce to you a well-known chicken dish originated from the Szechuan province of China, called 辣子鸡.
It is spicy and fiercely hot. This dish is one of the most popular Chinese dishes in restaurants, and I am not surprised that it is equally amazed by people worldwide.
There are different versions of the Szechuan chicken, and this recipe is based on traditional Szechuan ways to prepare, with some of my interpretations.

Ingredients for the chicken (A)
600g chicken thigh
1 tsp salt
1 tbsp light soy sauce
1 tbsp Shaoxing wine
1/2 tsp ground white pepper
1/2 egg
2 tbsp cornstarch
Other ingredients (B)
35g dried chili
80g groundnuts
2 tbsp Szechuan peppercorns
1 stalk scallion
4 cloves garlic
1 thumb-size ginger
1 tbsp doubanjiang
1 tsp douchi
2 tsp chili oil
Vegetables oil for deep-frying
Method:
Marinate the chicken
- Cut the deboned chicken meat skin-on into thumb size cubes.
- Use a paper towel to absorb as much water as possible from the chicken.
- Marinate the chicken meat with salt, light soy sauce, Shaoxing wine, ground white pepper, and half an egg for one hour.
- After that, coat the cornflour as in ingredient A.
Deep-fry the chicken
- Heat some vegetable oil to the wok over medium heat.
- Add the chicken pieces, and keep stirring to prevent them from sticking together.
- Deep fry until light brown. Remove from heat immediately and drain in a colander.
- Increase the temperature of the oil to 190°C/365°F.
- Return the chicken to the oil to deep fry again.
- Once the color has turned golden brown, remove and drain it on paper towels.
Dried chilies
- Cut the dried chilies into short sections.
- Shake the chilies to remove the seeds.
- Lastly, blanch the dried chili in boiling water for a minute, then drain.
Groundnuts
- Sieve the groundnuts with a colander to remove any debris and sand.
- Deep-fry at 120°C/250°F until turning brown.
- Remove them from oil and place them on a paper towel to cool.
Stir-fry
- Heat some oil in the wok.
- Saute the minced garlic, ginger, and white section of the scallion until aromatic.
- Also, the Szechuan chili oil, doubanjiang, douchi, Szechuan peppercorn (sieve to remove dirt), the soaked dried chilies, and two tablespoons of water. Saute until aromatic.
- Return the deep-fried chicken to the wok. Turn up the heat, and continue to saute for a minute.
- Mix in the groundnuts.
- Dish out and sprinkle some chopped scallion to garnish. Serve.

This easy Spicy Szechuan Chicken stir fry made with juicy chicken and veggies tossed together with Sichuan pepper corns, dried chili in sweet and savory delicious sauce.

Ingredients
▢500 g Chicken thigh boneless skinless ( cut into bite-size cubes )
▢1 Onion cut small dices
▢1 Bell pepper cut small squares
▢1 tbsp Garlic finely chopped
▢1 tbsp Ginger cut into thin strips
▢3 Spring onion cut into 1 pieces
▢1 tbsp Sichuan peppercorns toasted and grinded into fine coarse, see in note
▢8 Dried red chilli deseeded and cut into 1cm pieces, details in note
▢1 tbsp Sesame seeds
▢2 tbsp Oil for stir fry
▢Oil for shallow frying add 1 - 1½ cup of oil according to your pan size
Chicken Marinade
▢2 tsp Sugar
▢1 tbsp Shao Xing wine Chinese cooking rice wine, see details in note
▢1 tbsp Soy sauce
▢¼ tsp Black pepper powder
▢½ tsp Baking soda
Seasonings
▢1 tbsp Sugar
▢1 tbsp Soy sauce
▢1 tbsp Shao Xing wine
▢1 tsp Sesame oil
Marinade the chicken with sugar, soy sauce, Shao Xing wine, black pepper, baking soda and corn starch.
Mix it well to combine evenly and set aside for 15 minutes and prepare the vegetables.
To shallow fry the chicken pieces in high heat about 350°F.
Add oil about 1 high. Add the chicken pieces and fry for 5-6 minutes until crispy golden brown and set it aside.
Stir fry chopped onions and follow with the dried chilli and continue stir fry for another 1 minute.
Add chopped garlic,, ginger and stir for few seconds, then follow with the crushed Sichuan peppercorns and toss well with other ingredients.
Place the fried chicken back in, pour the soy sauce, Shao Xing wine, sesame oil and sugar. Combine well with everything.
Turn off the heat and add spring onions and sesame seeds. Toss well and transfer to serving plate.
