How To make Spinach Fettucini with Ginger Chicken
Ingredients

cup
shallot, chopped

each
garlic, clove, chopped

red pepper flakes, crushed

thyme, dried

lime, juice, freshly squeezed

mustard, dijon-style

tablespoon
soy-sauce, reduced-sodium
2
tablespoon
vinegar, rice wine
1/4
cup
wine, white, dry
2
teaspoon
honey
3
tablespoon
ginger, fresh, grated
1
chives, fresh, for garnish
Directions:
Preheat oven to 350 degrees. Put all the marinade/dressing ingredients in a blender and mix thoroughly as low speed. Place the chicken in a shallow baking dish. Pour half of the mixture from the blender over the poultry, reserving the remainder. Cover and refrigerate the chicken for 20 minutes.
While the chicken is marinating, bring a large pot of water to a boil over high heat. Add the fettucini and cook for 8 to 12 minutes to desired doneness.
In the meantime, remove chicken from the refrigerator. Uncover the baking dish and transfer it to the oven. Bake for about 15 minutes until the meat is no longer pink and the juices run clear.
When the pasta is cooked, remove the pot from the heat. Drain the fettucini and return it to the pot. Stir in the chicken stock and keep the mixture warm over the lowest heat setting.
Pour the cooking juices from the chicken into a saute pan. Add the squash, bell pepper, leek, broccoli, and mushrooms. Saute for about 3 minutes, just until the vegetables begin to wilt.
Transfer the pasta to a warm serving bowl, along with the vegetables. Shred the chicken on top. Add the reserved dressing and toss. Garnish with snipped chives.
Serves 4.

SAAG Chicken - Murgh Saagwala - This wonderful Chicken curry recipe is easy to make and packed with delicious Spinach!
Garam Masala recipe:
Here are the ingredients and steps to make this recipe!
1 bunch Spinach, blanched and pureed to yield 1 cup
3 lbs bone in Chicken pieces
1 – 2 tbsps Mustard Oil
1 – 2 tbsps Regular Oil
1 cup finely chopped Onion
1 tbsp each Ginger & Garlic paste
1 tsp each Chilli powder, Turmeric, Cumin & Coriander powder
2 cups diced Tomatoes
Salt to taste
1 tsp each Garam Masala & Kasuri methi
Blanch the spinach in some hot water and drain and leave aside to cool
In a saute pan, heat up regular oil, together with the fragrant mustard oil
Add one cup of finely diced onions and saute
Allow this to caramelize then add 1 tbsp of ginger paste followed by 1 tbsp garlic
Stir and cook to remove the raw Ginger and Garlic taste
Add 1 tsp each Chilli powder, Turmeric, Cumin & Coriander powder
Mix well to allow the spices to warm up
Add 2 cups diced tomatoes & some salt
Cover and allow to cook till mushy and it forms a thick paste
Stir at intervals to prevent burning
Add the chicken and fold in to coat in the gravy
Puree the cooled Spinach
Cover and cook and stir at intervals for about 20 – 30 mins till the chicken nice and tender
Add one tsp of Garam masala and Kasuri methi or dried fenugreek
Add the spinach puree in and fold in
Let this simmer for a few more minutes and it’s ready to eat with rice or rotis

Spinach Pasta w/ cream sauce & pan seared chicken| RECIPE VIDEO
Chicken:
Marinate chicken breast with
1/2 tsp. of salt, pepper, garlic powder, sumac, chili flakes, and paprika. and 1/2 of ginger garlic paste. Mix well, and set aside for 30 mins.
Heat a pan, add olive oil, and sear chicken on both sides.
Sauce:
In the same pan, melt 2 tbsp. of butter, to this add 2 tbsp. of flour and mix well. add 1/2 cup of milk, and 1/2 cup of chicken stock. Stir well, add 1 tbsp. of cream cheese. Season with 1/4 tsp of salt, pepper, garlic powder and chili flakes. Mix well until it the sauce thickens.
Pasta:
boil your favourite pasta in salted water. Once the pasta is al dente, add broccoli, let the broccoli cook with the steam of the pasta.
Combine all together. Serve hot!

Creamy Spinach & Mushroom Chicken recipe included
Creamy Spinach & Mushroom Chicken is a step by step video showing how to make this delicious recipe in the instant pot. You will definitely want to make this if you like spinach, mushrooms, and chicken. I did add grape tomatoes too. If you don't like tomatoes you can definitely leave them out. Enjoy!
Recipe:
2 to 3 chicken breasts filleted
2 to 3 tbsp of grape seed oil
1/2 tbsp of butter
1/2 cup of gluten free flour (or regular flour) salt & pepper mixed in
1 cup of diced onions (1 small chopped onion)
1/2 tbsp of crushed garlic
8 oz of baby bella mushrooms sliced
8 oz of grape tomatoes
8 oz of baby spinach
1 cup of chicken broth
1/2 tsp of oregano
1/2 tsp of Italian seasoning
4 oz cream cheese at room temperature
1/2 cup of grated Parmesan cheese
1/3 cup of heavy cream
1.5 tbsp of gluten free cornstarch or regular cornstarch mixed well with 1.5 tbsp of water.
Instructions:
Coat chicken in flour mixture and set aside.
Turn instant pot on saute high or more. Add 3 tbsp of grape seed oil and allow it to heat up for a 3 minutes.
Add chicken breasts a few at the time and lightly brown them on both sides for 2 to 3 minutes per side. Repeat until all chicken has browned.
Remove chicken breasts and deglaze pot by adding 1/2 tbsp of butter and gently scrapping the bottom of the pan.
Add onions and garlic. Stir frequently for 2 minutes.
Add mushrooms and stir frequently for another 2 minutes.
Add the chicken broth and Italian seasoning and oregano. Stir.
Now add the chicken breasts back in. Place tomatoes on top of chicken breasts. (Do not stir)
Add the baby spinach. It will cook down.
Turn your instant pot off and then turn it on to manual or pressure cook high for 5 minutes. After the 5 minutes has counted down do a quick release.
Remove the chicken.
Turn the instant pot off and turn it back on saute mode.
Now add your cornstarch slurry and whisk well. Allow it to come to a bubble and cook for 1 to 2 minutes.
Stir in cream cheese until it is well combined.
Turn off your instant pot.
Add heavy cream and stir.
Now add your Parmesan cheese little by little and stir.
Put your chicken back in to sauce and serve.
You can serve it with mashed potatoes, or rice, or pasta.
