How To make Steamed Green Pear Cake Decorated with Water Caltrop
STEAMED GREEN PEAR CAKE DECO:
FILLING:
90 g Sesame seed
90 g Plain flour
90 g Lard
75 g Syrup
45 g Peanut butter
OUTER DOUGH LAYER:
150 g Spinach juice
110 g Wheat starch
35 g Glutinous flour
1/2 ts Shrimp roe (optional)
75 g Sugar
1/2 tb Lard
1 ts Milk powder
1/8 ts Vanilla essence
GARNISH:
40 sm Twiglets, washed and dried
INNER DOUGH LAYER: Same as above outer dough layer, except replace spinach juice with boiling water. This one pretty much sums up the idea that in Asia things are not always what they seem. Looking at the picture, I see what are obviously steamed pears++complete with stems++with a couple of water caltrops on one plate and steamed finger citrons (an Asian fruit that looks sorta like a hand) accompanied by a couple of peaches on the other plate. (Water caltrops are those seeds that look like a set of miniature water buffalo horns.) What these things really are, though, are steamed, stuffed sweet dumplings. I really wish I could post a .gif with this message. These things look REAL! Somehow, I doubt that anyone will want to attempt this one, but here it is just in case. Establishment: Yung Kee Restaurant 36-40 Wellington Street, Central, Hong Kong Chinese Cuisine Practical Class Platinum Award - Desserts THE NEVER ENDING STORY (12 servings) Chef: Yau Shing (Yung Kee Restaurant) "Longevity" would be an over-simplified literal translation for this dual presentation of treasured culinary symbols crafted out of flour. Peaches symbolize longevity, and fairy tales often feature water caltrops (bull horn-shaped roots) as part of the fairy diet. The Fairy Mother herself is given peaches on her birthdays. The finger citrons, a kind of fruit, have long represented Buddha, owing their resemblance to the shape of Buddha's palm. The combination of associations - with long life, happiness, elegance and spiritual peace - heightens the diner's admi- ration of the culinary sculptures. To prepare and cook: 1. For sesame paste filling, stir-fry sesame seeds in a dry, heated wok until golden. Set a quarter aside and grind rest to powder. 2. Stir-fry flour in a dry wok, over a low flame, all slightly yellow. Then sift it. Mix all filling ingredients together. Place in refrigerator until firm. 3. For doughs (made in two batches, one with spinach juice, one with boiling water). Heat spinach juice or water. Pour hot liquid into a mixing bowl containing wheat starch and glutinous flour. Mix well. Remove mixture to a clean working surface and add remaining ingredients one a time, working up a smooth texture. 4. For pear shaping, form spinach-dyed dough into small balls of approximately 4 g each. Flatten round discs. Do same for uncoloured dough. Place one uncoloured disc on top of a dyed dough disc. Place a small portion of sesame paste filling on top, and mould discs upwards around it to form pear shape. Stick one dry twiglet into top end of pear shape. Press lightly on bottom of pear shape to form a firm base. 5. Steam for 3 to 5 minutes. (If shrimp roe not available, chocolate powder could be dusted over the pears after they have cooled.) Apples are in season so I made an apple pie this time!
I made three apple pies through trial and error.
We tried three different times to boil the apples for 10, 20, and 30 minutes.
The video footage shows an example of cooking apples for 30 minutes. This makes it look like apple jam, so I recommend simmering for 10-20 minutes.
A freshly baked apple pie with crème fraîche épaisse from France, clotted cream from England, and vanilla ice cream is very delicious.
I will show you how to make a simple apple tart with leftover pie dough at the end of the video.

Pie dish 21cm
◼Pie dough (brisée)
200g flour
3g (½ tsp) salt
30g sugar
130g cold unsalted butter
35g cold water
*Make two doughs with the ingredients above for the bottom dough and the top dough.
◼Filling
8-9 apples (1.35 kg apple slices)
75g unsalted butter
180g sugar
20-25g Lemon juice (Half a lemon)
◼Eggwash
1 egg yolk
15 g milk
➢Method
Put flour, sugar, salt and butter in a food processor and blend.
When it becomes sandy, add water and bring the dough together.
Fold the dough and chill in the refrigerator.
Melt butter in a pot, add apple slices, lemon juice and sugar, cover and cook for 20 minutes.
Take the lid off and boil down while stirring until the apples are completely dry, then let them cool.
Roll out the pie dough, place it in the mold, and add the apples.
Cut the pie dough into strips and place them on top of the pie.
Fold the outside of the pie dough into the mold.
Mix the egg yolk and milk, brush the pie and bake in a preheated oven at 200°C for 60-65 minutes. Bake in the bottom rack of the oven and cover with aluminum foil if the top burns.

Pear and Brie Crackers | पेर अँड ब्री क्रॅकर्स | Sanjeev Kapoor Khazana
A spicy and crunchy dessert topped with cheese and pear is a simple fruity post-meal serve to be had with a vanilla scoop. This hot-and-cold pairing is simply delicious.
PEAR AND BRIE CRACKERS
Ingredients
½ red pear
½ green pear
8 phyllo sheets
Melted butter as required
150 grams brie cheese, sliced
4 tsps brown sugar
Cinnamon powder to sprinkle
2 tbsps dried cranberries
2 tbsps crushed walnuts
Vanilla ice cream for serving
Method
1. Preheat the oven at 180°C.
2. Place 2 phyllo sheets on a working board. Apply melted butter and place 2 more sheets on top.
3. Drizzle some more butter and spread evenly. Place 2 more sheets and spread some melted butter on top. Finally place the remaining phyllo sheets on top.
4. Place the sheets in a rectangular tart mould and press the edges.
5. Deseed red and green pear and slice thinly.
6. Arrange 100 grams brie cheese on the base of prepared tart and sprinkle 2 tsps brown sugar.
7. Now arrange sliced pear on top and place the remaining brie cheese on top.
8. Sprinkle remaining brown sugar and cinnamon powder on top.
9. Sprinkle dried cranberries and walnuts on top.
10. Bake in preheated oven for 25 minutes.
11. Slice and serve hot with vanilla ice cream.
