How To make Stinging Nettle Tagliatelle with Hot Sausage
8 ounces spicy Italian sausage with fennel seeds
cut
1/4" piec
1/2 pound kale, finely chopped :
to yield 4C
1/2 cup chicken stock
1/2 cup freshly grated Pecorino cheese
Stinging Nettle Tagliatelle: See notes
Heat 6 quarts water to boiling in a spaghetti pot and add 2 tablespoons salt.
In a 10-inch to 12-inch saute; pan, cook sausage over low heat until fat begins to render, about 6 minutes. Turn heat up to medium and cook until most of fat from sausage has rendered out and sausage is golden brown. Add kale and chicken stock and cook until very soft, about 2 to 3 minutes. Season with salt and pepper and remove from heat.
Drop pasta into boiling water and cook until tender (about 1 minute). Drain pasta and toss into sauté pan with kale and sausage. Cook over high heat until coated, about 1 minute. Add grated cheese and toss to mix. Pour into heated serving bowl and serve.

In this episode, we forage in our Tuscan garden and land for wild herbs (weeds?). Not sure how to describe them in English and we made a local soup. We have been taught by our friend Nicola, a chef and local. Perfect way to get your organic greens, free and fun. Do however check that what you pick is edible!! We are also enjoying our blossom and the whole hill is about to burst into that soft green of early spring. The wildflowers are starting to coat the hillside and it brings a happy skip to our hearts.
Wild Herbs soup (serves 4)
This is a recipe from our area. Very simple but nourishing.
Ingredients:
Wild herbs 500 gr/ 1lb 3 oz
EV Olive Oil 3 tbsp
Guanciale or pancetta 100 gr/ 3 ½ oz
1 medium onion
Borlotti dry beans 250 gr/8 oz or 400 gr/14 oz if tinned
2 bay leaves
Salt to season
4 slices of bread (stale is better)
We’ve found in our garden these wild herbs:
Cavoletti/Strigoli - Bladder Campion
Tarassaco diversi tipi - Several members of the dandelion family
Erba Cipollina - Wild chives
Ortica - nettles
Ingrassaporci/Piattello - Flatweed
Plantego lanceolata/English Plantain
Acetosa - Sorrel
Vetricci - Old man’s beard young sprouts (just when they're curling)
Rosmarino - Rosemary (domesticated!)
You can use many herbs, depending where you live. The most important thing is that you know them well, as some herbs can be toxic. So it is very important you know your herbs.
The first thing to do is to soak your dry beans the night before.
Drain the soaked beans and put them in a saucepan and fill it with fresh water. Add 1 or 2 bay leaves
Bring it to the boil and simmer for 1 hour and a half.
Prepare a large saucepan with boiling water.
Select the herbs and wash them a few times.
Chop them.
Put the herbs in the hot water and boil them for 1 or 2 minutes, then drain them and set aside. This is to remove potential irritants.
Chop the onion and dice the guanciale/pancetta
In another saucepan pour 3 tbsps of EV Olive oil and on a low heat fry the chopped onion and the diced guanciale/pancetta
After 3 or 4 min add a couple of ladles of beans stock, then add the beans and all the wild herbs.
Pour the rest of the beans stock enough to cover the herbs and the beans.
Bring it to the boil and cook for about 15 minutes (depending on the herbs, if they are harder you might need to prolong the cooking time)
A couple of minutes before they’re ready, season.
Serve in a bowl on a slice of stale bread and with a dash of EV Olive oil

So folks this video is a little bit of an experiment as you'll see me introduce at the start of the video. I've always liked the idea of playing around with my content and also some of you have suggested mashing it together to make more of a long-form food show.... so here's a little go at it.
In this video I am making a go pro stir fry, showing you how to make some amazing homemade welsh cakes, and taking up the challenge of collecting and eating / drinking stinging nettles amongst other fun things. Spring Herb Pie - Foraging, Baking and Eating
While I have been out and about this spring, I've noticed that it seems everything is especially fresh and green - and there are a great many tasty wild green vegetables to be foraged.
