How To make Stir Fried Ginger Beef (Nua Pad King)
1/4 c Vegetable oil
1 Garlic clove, minced
10 oz Top sirloin steak, cut into
-1/4x1-inch strips 1/2 c Fresh ginger, peeled and
-very thinly sliced 1 tb Fish sauce (nam pla)
1 tb Soy sauce
2 tb Oyster sauce
1 1/2 ts Brown sugar, firmly packed
1 3/4 c Green bell pepper, thinly
-sliced 1 c Onion, thinly sliced
1 1/2 c Freshly-cooked rice
Heat oil in wok or large skillet over medium-high heat. Add garlic; stir-fry until browned, 20 to 30 seconds. Add beef and stir-fry until browned. Add ginger, fish sauce, and soy sauce; stir-fry for 1 minute. Mix in oyster sauce and sugar. Add bell pepper and onion. Cover, remove from heat and let stand for 2 minutes. Authentic Thai Recipe for Spicy Beef with Mixed Peppers - เนื้อผัดพริกอ่อน - Neua Pad Prik On
This delightful Thailand-style stir-fried beef steak with mixed peppers is great as a one-dish meal with some piping hot steamed rice, or as a main dish to be served with other foods for a complete meal. We used ripe red Thai long chilies along with an equal amount of green ones, and some yellow wax peppers for an appetizing blend of color. We add just a little Thai hot chili for that spicy flavor, but you can leave them out for an equally delicious result.

Ingredient List for my Spicy Stir-fried Beef with Mixed Peppers:
5 - 6 oz Beef (lean beef steak)
4 Thai Long Chili (or other mild chili (2 red, 2 green))
2 Wax peppers (or other mild yellow chili)
2 - 4 Thai Hot Chili (as desired for spicy flavor)
1/4 - 1/2 Brown or Yellow Onion
3 oz Cloud Ear Fungus
1/4 cup Chicken or vegetable stock (or water)
2 Teaspoons Oyster Sauce
1 Teaspoon Fish Sauce
1 Teaspoon Light Soy Sauce
1 Teaspoon Sugar
Directions:
1: Fry the crushed garlic and hot chili together in oil for about a minute, then add sliced beef. Continue frying until the beef is nearly cooked.
2: Add the sauces and sugar. Fry until hot and sticky, then add some vegetable stock.
3: Add the peppers, onion, and cloud ear fungus. Fry just until the peppers are slightly wilted. Serve with steamed rice and other foods.

1/2 yellow onion
1 red, 2 green large chilies
2 spring onion
Seasonings:
Black pepper
1 teaspoon sugar
1 tablespoon oyster sauce
1/2 tablespoon soy sauce
