2 c Shredded Flank steak or
-beef tenderloin 1 ts Salt
1 tb Nam pla (fish sauce)
1/2 c Chili cut into strips
1/2 c Celery cut into 1 inch
-lengthwise 1 ts Maggi sauce
1 c Oil
"A few years ago, the Chinese restaurant in the Amarin Hotel served this dish which I copied. The Amarin Hotel was a small hotel with personalized services and very popular with many regular guests. I worked for a short time at the dress shop there. The Amarin Hotel is no more, there is a big modern shopping plaza in its place now. The shopping plaza has the first Macdonald Hamburger outlet in Thailand situated there. It is doing very well. I still miss the Amarin." Marinate beef with salt and nam pla for 1 hour. Heat frying pan and cook the salted beef (without oil) for 5 minutes. Remove and drain on paper towel. Heat the oil in a wok over high heat to fry the salted beef strips until crisp. Drain oh paper towel. Heat the remaining oil. Stir-fry hot chili, shredded celery and green onion for 1 minute. Add fired crispy beef. Season with Maggi sauce. Pour onto serving plate. 500g tenderloin beef

1 tsp Shaoxing cooking wine
1 tbsp light soy sauce
1 egg white
40g cornstarch
Seasoning sauce:
1 tsp black rice vinegar
2 tbsp light soy sauce
1 tsp dark soy sauce
1 tbsp oyster sauce
1 tbsp sugar
1 tsp cornstarch
10cl water

Hello Everyone! I'm supper excited to upload this video today because it was inspired by a dish I recently had in a local Sichuan restaurant and it was so yummy! I think cumin beef stir fry is one of the easiest dishes you can cook from home and it does not really take a lot of time! I also used Trader Joe's Shaved Beef for this dish to save time but you can use any sliced beef or lamb to make this dish at home! I'm a huge fan of the cumin + onion flavor and I'm sure you'll love it! :)

Ingredients:
Shaved beef from Trader Joe’s (you can also use any sliced beef for this dish! :))
Ginger: 1 slice
Garlic: 2 cloves
Cilantro: 1 handful
Cayenne pepper: a few ( can substitute with any spicy pepper)
1 large green bell pepper
Half of a purple onion
Marinate beef: cooking wine 2 tbsp, soy sauce 1 tbsp, oyster sauce 2 tbsp, white pepper powder 1tsp, 1 egg white, corn or potato starch 1 tbsp
Stir-fry seasoning:
Dry chili:15-20(handful)
Chili flakes: 2 tsp
Cumin seeds: 2 tsp
cumin powder:2 tsp
Dark soy sauce: 1-2 tsp
Salt: 1 tsp

The spicy dry-fried beef is a perfect example of the dry-frying technique unique to Sichuan cuisine. The shredded beef is un-marinated, quickly stir fried in a wok to drive off the moisture and intensify the beef flavor. The shredded beef will be stir fried twice with aromatic spices to absorb more flavor. The end result is spicy and aromatic beef with crispy and chewy bites.
The key to this dish is to control the temperature when dry frying the beef, otherwise the shredded beef can be easily overcooked.

▢350 g Chicken breast ( about 12oz ) cut into thin strips about
▢1 Egg white
▢1 cup Corn starch
▢1 tbsp Garlic finely chopped
▢2 tsp Oil
▢Oil for frying Vegetable or neutral flavour oil
Chicken Marinade
▢1 tbsp Light soy sauce
▢1 tsp Garlic paste or finely grated garlic
▢1 tsp Sesame oil
▢2 tsp Sugar
▢½ tsp White pepper or black pepper
Chilli Sauce Mixture
▢3 tbsp Sriracha sauce Or hot chilli sauce ( see details in note )
▢2 tbsp Tomato ketchup
▢2 tbsp Honey Or sugar
▢1 tbsp Lime
▢¼ tsp Chilli flakes optional
Garnish
▢1 Red chili pepper cut thin slices
▢2 Spring onions cut thin slices
???? Instruction
Place the chicken strips in a bowl and marinade for 10-15 minutes. Mix all the sauce ingredients in a small bowl and set it aside.
Next, add egg white into the chicken and mix it well. Then add the corn starch and coat each chicken piece. ( Add more corn starch if needed. )
Deep fry the coated chicken pieces and set aside for 4-5 minutes. Then fry it again for another 2-3 minutes until crispy golden.
Sauté the chopped garlic for few seconds. Then pour the sauce mixture in and stir for few seconds, place the fried chicken strips back in the wok.
Combine the sauce and chicken pieces well and sprinkle fresh chilli slices and spring onions.
Transfer to serving plate and serve immediately.

1 clove Garlic, minced
2 Bird's eye chilli, minced
1 bunch Basil leaves
150 g Beef, sliced
1 tbsp Exotic Food Fish Sauce
4 tbsp Exotic Food Red Chilli Basil Wok Sauce
1 tbsp Exotic Food Wok oil
Procedure
1. Heat pan on medium heat. Add wok oil, garlic and chilli. Fry until brown.
2. Adjust heat to high and add beef. Fry for 2 mins then add red chilli basil wok sauce and fish sauce and mix well.
3. Add basil leaves and mix well. Turn off heat and serve with rice.
