1 c Sugar
1 tb Butter;or shortening
1 Egg
2/3 c Milk
2 c Flour
2 ts Baking Powder
1/4 ts Salt
1 ts Vanilla
1 c Strawberries;crushed
1 qt Strawberries
Cook balance of quart of berries in 1 cup water and 1/2 cup sugar, thicken with 1 tbls cornstarch. Serve over cake while still warm. Mix all ingredients in order given and Bake in med heated oven, 350 degrees until done. try 30-35 min's?

HOMEMADE CAKE RELEASE:
INGREDIENTS:
Strawberry Filling/Reduction
▢3 cups (600 g) fresh strawberries - hulled and halved
▢¾ cup (150 g) white granulated sugar - see note 5 on blog post if you have very sweet strawberries
▢1 tbsp lemon zest - about the zest of 1 lemon
▢¼ cup (60 g) fresh lemon juice
▢3 tbsp (22 g) cornstarch - also known as cornflour
▢2 tbsp water
Strawberry Cake
▢2⅓ cups (300 g) flour - regular all purpose (see note 1 on blog post if you want to use cake flour)
▢¼ cup (25 g) cornstarch - also known as cornflour
▢2½ tsp baking powder
▢½ tsp salt - omit if using salted butter
▢¼ cup (60 g) milk - room temperature
▢¾ cup (195 g) strawberry filling/reduction - made in the first step of this recipe
▢1 drop red gel food colouring - optional but recommended, see note 6
▢½ cup (113 g) unsalted butter - room temperature
▢½ cup (105 g) unflavoured vegetable oil - I use canola
▢1½ cups (300 g) white granulated sugar
▢6 large (225 g) egg whites - room temperature, size 7 eggs
▢3 tsps strawberry essence/extract
▢1½ tsp vanilla essence/extract
▢1 tsp white vinegar
Bake at 160 °C (320°F) with the fan on (convection mode) for 35 minutes, or until a toothpick comes out clean. If you don't have a fan function, increase the temp to 175°C (347°F).
Strawberry Cream Cheese Frosting
▢1 cup (225 g) unsalted butter - room temperature
▢4½ cups (570 g) icing sugar - also known as powdered sugar/confectioners sugar
▢1½ cups (335 g) cream cheese - cold, firm type not spreadable
▢¼ cup (65 g) strawberry filling/reduction - made in the first step of this recipe
▢2 tsp strawberry essence/extract
▢1 tsp vanilla essence/extract

INGREDIENTS,
fresh strawberry - 50g
milk - 30ml
eggs medium size - 03/55g each
lemon juice/vinegar -1/4 tsp for egg white beaten
sugar - 50g/(1/4 cup)
cooking oil/veg oil/ melted butter - 40ml
strawberry essence - 1/4 tsp
red/pink food color - 1/4 tsp
cake/all purpose flour/maida - 60g(1/2 cup)
baking powder - 1/2 tsp
Bake at 170°c for 20-25mins
loaf cake pan size - 4x 7
Bowl and beater not contain water,it should be clean and dry ,not use spoil egg(near to exper date),add 1/4 tsp of lemon juice or salt or cream of tartar before the whisk, and add sugar little by little during the whisk, Eggs should be at room temperature and do'not mix egg whites with egg yolk. these factors more important to make a prefect egg white meringue and perfect cake.

Ok maybe I'm biased since this cake represents so many good memories but I think you'll like it too! It does such a great job of capturing natural strawberry flavor and scent.

Strawberry Cake Filling Recipe ????
Today I’m making a thick strawberry cake filling that is SO easy to make and tastes much better than any pre-made filling that you would buy at the grocery store. It’s super simple to make!
Strawberry Cake Filling
¾ Cup Water
3 Tablespoons Cornstarch
12 oz frozen unsweetened strawberries
¾ Cup Granulated Sugar
1 Tablespoon Lemon Juice
1. Pour water and cornstarch into a medium size sauce pan. Whisk into a slurry.
2. Pour strawberries, sugar and lemon juice into the pan and cook on medium-low for 10-15 minutes until the strawberries have broken down. Use a potato masher to mash the strawberries into a chunky consistency.
3. Once the filling has darkened and thickened up, transfer to a bowl and refrigerate to cool it down completely.
*The filling will last in the refrigerator for about a week. After the cake is filled, store it in the refrigerator. However, you can keep it out at room temperature for a few hours. Enjoy!
