How To make Strawberry Lime Tart
1 No-Roll Tart Shell

LIME CURD:
1/3 c Strained lime juice
1/4 c Unsalted butter
1/3 c Sugar
4 Egg yolks
2 pt Strawberries
- rinsed, hulled and sliced Confectioners' sugar - for finishing PREPARE AND REFRIGERATE tart shell. FOR THE LIME CURD: COMBINE THE LIME JUICE, butter and sugar in a heavy, non-reactive pan. Place over low heat and bring to a boil over low heat. Meanwhile, whisk the yolks in a bowl until liquid. When the lime mixture boils, whisk half of it into the yolks. Return the remaining lime mixture to a boil and whisk in the yolk mixture. Whisk constantly until the mixture thickens and begins to simmer around the edge of the pan, about 2 minutes. Pour the lime curd into a non-reactive bowl, press plastic wrap against the surface and refrigerate up to 1 week. TO BAKE THE TART SHELL: PREHEAT THE OVEN TO 350F and set a rack in the middle level. Pierce the dough with a fork at 1-inch intervals. Cut a 14-inch disk of parchment or wax paper and line the dough with it, making
sure it fits flat against the side of the tart shell. Fill with dried beans or pie weights and bake about 20 minutes, until the dough appears dull and dry when a corner of the paper is lifted. Remove the tart shell from the oven, remove the paper containing the weights, and return the shell to the oven for 5 to 10 minutes longer, until it is lightly colored. Do not overbake or the shell will be dry and tough. Cool on a rack. TO ASSEMBLE THE TART: SPREAD THE LIME CURD evenly in the tart shell. Arrange the strawberry slices, overlapping, in concentric or straight rows on the lime curd. Sprinkle with confectioners' sugar immediately before serving.

21 ounce puff pastry dough
1 egg yolk
3 eggs
3/4 cup sugar
Juice of 3 Sicilian limes
1 tablespoon lime zest
3 tablespoons unsalted butter
1 cup strawberries, chopped

Strawberry Tart with Ricotta and Mint Filling
This decadent tart with it's almond crust, strawberries and ricotta filling makes the perfect dessert for summer.
Ingredients:
Almond Sweet Pastry
1 1/4 cups flour
1/2 cup ground almonds
1 stick (110 g) cold unsalted butter, cut into small (1/2-inch) cubes
1/2 tsp salt
2 tbsp sugar
1 egg
1 tsp vanilla extract
1-2 tbsp ice water
Ricotta Filling
1 pound (500 g) ricotta cheese
1 tbsp minced fresh mint
juice of 1 lemon
zest of 1 lemon
1/2 cup powdered sugar
Almond extract
Strawberry Glaze
3 tbsp strawberry jam
1 tbsp water
Topping
1 1/2 pound fresh strawberries
1 tbsp chopped almonds
Directions
1. Prepare the sweet pastry. In a large bowl mix flour with sugar and salt. Incorporate butter to the flour, using a pastry blender, a fork or a pastry processor, until crumbs are formed. Add egg and vanilla extract and mix them in. Add water and incorporate into the dough. Wrap it with plastic, press slowly to form a disk and refrigerate for at least 30 minutes or overnight.
2. On o floured surface or over the plastic wrap roll the dough to a circle with about 1 1/2 inches larger than your tart pan. Lift up the rolled dough and place it on a greased 11 inch tart pan lined with parchment paper. Remove the edges and refrigerate for 30 minutes before baking.
3. Preheat the oven to 350 F (180C).
4. Prick the dough with a fork and line a parchment paper over the dough. Fill with dry beans, rice or pie weights.
5. Bake for 15 minutes. Remove the weights and the parchment paper. Return to oven for another 10 to 15 minutes.
6. Brush the shell with beaten egg and return to oven for 2 minutes more, to seal the shell.
7. Remove from the oven and let cool completely before removing the shell out of the tart pan.
8. Prepare the ricotta filling. In a large bowl place the ricotta cheese with sugar, lemon zest, lemon juice, almond extract and minced mint. Mix it well and refrigerate until ready to fill the tart.
9. Prepare the strawberry glaze. Heat the strawberry jam and water and strain it through a sieve. Set aside to cool.
10. Assemble the tart. After removing the tart shell from the pan (if desired) start filling it with ricotta mixture. Add halved strawberries on top and brush with strawberry glaze. Sprinkle chopped almonds on top and refrigerate to cool.

- زبدة 125 غم
- فانيليا 5 مل
- بيض 1 قطعة
التعليمات
- يُمزج السكر مع الزبدة
- يُضاف البيض والفانيليا
- يُضاف الدقيق ويُمزج
- توضع العجينة في الثلاجة لمدة 1-2 ساعة
- تُفرد العجينة باستخدام فرادة العجين
- يُقص العجين على حسب حجم قوالب التارت
- توضع حبات فاصوليا على سطع العجين محافظة على شكل القالب
- تخبز في الفرن على درجة حرارة 180 مئوية لمدة 15 دقيقة
- يتم إزالة الفاصوليا وتُخبز في الفرن على درجة حرارة 180 لمدة 5 دقائق أو حتى يصبح اللون ذهبي

- بيض 3 قطع
- صفار البيض 2 قطع
- سكر 115 غم
- عصير ليمون 100 غم
- بشر ليمون 1 غم
- كريمة 100 غم

- تُبرد القوالب في الثلاجة لمدة 2-4 ساعات

- Add egg and vanilla
- Then fold in flour & mix

- Sheet the dough with rolling pin
- Cut the dough and mold as shown
- Fill the dough with dried beans to avoid the shell from shrinking
- Bake it in pre-heated oven at 180C for 15 mins
- Remove the beans & bake it in the oven at 180C for 5 mins or until golden

Ingredients for a 22-25 cm tart pan:
For the lime curd:
200 g granulated sugar
30 g corn starch
3 egg yolks
2 large eggs
200 ml lime juice + zest of 2 limes
100 g room-temperature butter
For the crust:
200 g biscuits such as graham crackers
100 g melted butter
For the assembly:
25 cl crème fraîche or full fat heavy whipping cream
300 g strawberries
50 g strawberry jam (optional)
Key Lime Pie
This quick and easy key lime pie has a creamy filling with lots of zest and zing, a delicious cookie crust and of course lots of whipped cream! It's a perfect make ahead pie and nearly foolproof! If you don't have key limes you can totally use regular limes.
