KETO 'APPLE' SPICE BUTTER CAKE
One of the first keto cake recipes that I made was a butter cake and everyone loved it! It's incredibly delicious, so I figured I would use that base to make a keto APPLE spice butter cake.
Now, again, before anyone comes to the comment section to drag me, please note there are NO apples in this recipe. Instead, to make a good keto apple alternative is to use apple cider vinegar and some spices. Alternatively, you could also use apple extract, but I didnt have any.
This keto apple cake recipe is fairly easy to make and there's no special ingredients (like my usual whey isolate). Not this time! If you like to bake keto treats, you should have all the ingredients in your kitchen.
One thing I will note is when making the syrup, I ran out of cinnamon. So you will notice that I used liquid cinnamon flavouring (shoutout to OOOFlavors! not sponsored, they're just awesome) but you can use just 1 tsp of regular ground cinnamon.

What you will need:
CAKE:
2 cups (200g) almond flour
1/2 cup (100g) sour cream
2 tbsp butter - melted
1 tsp cinnamon
1 tsp allspice
1 tsp nutmeg
3 eggs
1/2 cup (100g) sugar substitute
1 tsp baking powder
1 tsp vanilla
SYRUP:
1/2 cup (100g) butter
1/4 cup (50g) sugar substitute
1 tbsp sugar free maple syrup
2 tbsp apple cider vinegar
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp nutmeg
In a mixing bowl, whisk together the cake ingredients.
Pour into a greased bundt cake pan.
Bake at 350°F / 175°C for 35 minutes.
While the cake bakes, melt the butter in a pot over medium heat.
Whisk in your sugar substitute, vanilla, cinnamon, nutmeg, allspice and maple syrup..
Bring to a simmer, stirring occasionally so the sugar sub doesn't burn.
Keep it simmering until it begins to thicken up. Should take around 3-5 minutes.
Once it's thickened, take off heat and let it sit until the cake is done.
When the cake is done, use a skewer or end of a utensil to poke several small holes into the top (technically the bottom) of the bundt cake.
Pour the butter mixture around the cake, making sure the holes are filled with the butter. Keep swirling the pan around until your mixture has dissolved into the cake.
Set aside and let it cool for 1 hour.
When you’re ready to serve, place a plate on top of the bundt pan and flip it around so the cake pops right out!
Serve!
This makes about 12 servings.

BETH'S APPLE SPICE CAKE RECIPE
Serves 10-12
INGREDIENTS:
1 ½ cup (270 g) brown sugar
¾ cup (180 ml) vegetable oil
¼ cup (60 ml) molasses
4 eggs
½ cup (120 ml) apple sauce
1 tsp (5 ml) vanilla extract
½ cup (120 ml) water
2 cups (240 g) flour
2 tsp (10 ml) baking powder
1 tsp (5 ml) salt
1 ½ tsp (7.5ml) ground cinnamon
1 ½ tsp (7.5 ml) ground ginger
½ tsp (2.5ml) ground cloves
½ tsp (2.5 ml) nutmeg
For Garnish:
2 Honeycrisp Apples, sliced horizontally into slices
Glaze:
¼ cup (48 g) whipped cream cheese
1 tbsp (7 g) powdered sugar
1 tsp vanilla
1-2 tbsp (15-30ml) milk, or more to reach a pourable consistency
METHOD:
Preheat oven to 200F (93C).
Line a baking sheet with parchment paper. Slice apples into very thin wheels, cutting the apple horizontally.
Place on baking tray in a single layer. Bake for 1 hour, then flip and bake for 1 hour more. Once done, turn off oven, open oven door and allow to cool for 30 mins. Once done keep at room temperature until ready to decorate cake.
Preheat Oven to 350F (175C).
Prepare a Bundt pan with baking spray (preferably the spray that also has flour in it) coating with a pastry brush to get into all the nooks and crannies and set aside.
In a large bowl, mix together the brown sugar, vegetable oil, molasses, 4 eggs, apple sauce, vanilla and water.
In a medium bowl whisk together the flour, baking powder, salt, cinnamon, ginger, cloves and nutmeg.
Slowly add the dry ingredients to the wet ingredients and whisk gently to combine.
Pour batter into prepared Bundt pan. Bake for 35-40 mins until a long skewer comes out clean.
Once completely cooled, transfer to a cooling rack.
Prepare the glaze by mixing the cream cheese with the powdered sugar and vanilla, whisk until smooth. Add milk and whisk until frosting is pourable, may need to add more milk depending upon which brand of cream cheese you use, some brands are denser than others.
Ladle glaze over the top of the cake crown, allowing it to drip over the sides. Top with the dehydrated apples, transfer to cake stand. Enjoy!

3 large or 5 small apples
½ cup margarine
1 egg
1 cup sugar
1 tsp. cinnamon
½ tsp. nutmeg
1 tsp. baking soda
1 cup flour
✔ Directions
In a bowl, cream together the egg, sugar and margarine.
Add cinnamon, nutmeg, soda, and mix.
Stir in flour.
Cut apples into small chunks and add to mixture.
Bake at 350 degrees fahrenheit for about 30 to 45 minutes.

Fresh Apple Spice Cake

Ingredients
1 cup chopped pecans
1/2 cup dark rum, such as Mount Gay
1 cup golden raisins
1 cup granulated sugar
1 cup dark brown sugar, lightly packed
3 extra-large eggs, at room temperature
3/4 cup vegetable oil
2 teaspoons pure vanilla extract
2 teaspoons grated orange zest (2 oranges)
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1 1/2 pounds Granny Smith apples, peeled, cored, and 1/4-inch-diced (3 to 4 apples)
Vanilla ice cream, such as Haagen-Dazs
Caramel sauce, such as Fran's, heated
Directions
Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.
In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. Sift the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a medium bowl. With the mixer on low, slowly add the flour mixture to the wet mixture, just until combined. Drain the raisins, discarding the liquid. With a rubber spatula, fold the raisins, pecans, and apples into the batter. Spread into the prepared pan and smooth the top.
Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool, cut into squares, and serve warm or at room temperature with a scoop of vanilla ice cream and a drizzle of warm caramel sauce.
