Amy Roloff Making Sunshine Lemon Bars with Isabel and Jacob Roloff
I could eat lemon bars anytime of the year and especially when I feel like I want a little sunshine in my day. That’s what these bars remind me of, a little sunshine. These bars are filled with a little tanginess from the lemon and a big kiss of sweetness from the sugar.
I remember making these bars for tea parties with my daughter and for my friends. They are delectable. Go ahead and make some today and you’ll bring a little sunshine into your day.
Ingredients:
Crust:
2 ½ cups of Flour
2/3 cups of Powdered Sugar
½ tsp Salt
1 cup unsalted Butter, soft
1 tsp Vanilla
Filling:
3 Tbsp Lemon Zest, chopped to get lemon zest bits (about 3-4 lemons, depending on size)
3 cups of Sugar
4 Tbsp Flour
8 Eggs, room temperature
1 cup Lemon Juice, (about 4 lemons)
Directions:
* Preheat the oven 350 degrees. You’ll need a 9 x13 baking dish ready (glass preferred)
* In a bowl, stir together the flour, salt and powdered sugar. Add softened butter and vanilla and mix until dough comes together and is completely combined. Press dough into baking dish, gently pressing dough evenly in the baking dish. Bake cookie dough for about 20 minutes until the dough begins to turn a light golden brown color. Remove from the oven and cool.
* In the meantime, in a bowl combine the sugar, flour and lemon zest and stir till combined. Add in the eggs, lemon juice mix well until completely and thoroughly combined.
* Pour the lemon mixture on top of the crust (it’s ok if still a little warm). Bake in the oven for about 25 minutes. They are done when the center is set and doesn’t jiggle. Remove from the oven and cool completely, for about 1 hour or more, before cutting into bars. For a suggestion, cut bars with a sharp knife and wipe clean after each cut.
* When bars are cooled, Dust with powdered sugar, if desired.

크리스마스 혹은 연말에 모임에 가져가거나 홈파티 용으로 아주 쉬운 rice casserole들고 왔어요! 리조또 비슷한 식감이지만 리조또 보다 훨씬 쉬운 오븐요리 랍니다.
보통 고기를 넣어서 쓰시는데 저는 Frichick이라는 콩고기를 사용했어요 :) 그리고 보통 치즈를 위에 얹어 오븐에 굽지만, 저는 넣지 않고 했어요.
하나만 가져오면 또 아쉬우니까 2가지 맛으로 원하시는대로 선택해서 만들어 보세요!

Green Bean Casserole Recipe
1 pound green beans
1 large onion chopped
3 tbsp ghee or unsalted butter
2 tbsp all-purpose flour
6 to 8 cloves garlic minced
salt & pepper to taste
2 tsp garam mix masala
1 tbsp lemon juice
Fried onions for garnish optional
1 cup milk
1 can cream of mushroom soup
1 cup chopped mushrooms
***COOKING INSTRUCTIONS
Heat ghee in a large pan with a lid. Add flour, onion, mushrooms, and garlic. Mix well and cook, stirring constantly until the flour begins to turn golden, about 3-4 minutes.
Add cream of mushroom, milk, mushroom, & pepper. Mix well.
Add green beans. Bring to a boil and cover.
Lower the heat to medium and cook until the beans are softened, about 8-10 minutes.
Remove the lid. Cook until the gravy thickens, approximately 6-8 minutes.
Add cream, garam masala.
Remove from heat and add lemon juice.
Top with fried crisp onions. ????
