How To make Sweet Golden Batter Bread
1 package active dry yeast
1/4 cup warm water
1 cup milk
1/2 cup butter or margarine
1/2 cup sugar
1 teaspoon salt
2 eggs
2 teaspoons vanilla
4 1/2 cups bread flour
Proof Yeast in water. Heat milk and butter until butter melts. Add sugar and salt to milk. Cool to lukewarm. Blend yeast mix., milk mix., eggs, and vanilla. Mix in flour gradually. Beat until smooth. Dough will be sticky. Place in greased bowl. Cover with damp towel or plastic wrap and place in a warm place (such as in oven with pan of hottest tap water on rack below) until doubled in size, about 2 hours. Punch down and beat for 1 minute. Put dough into well greased Bundt pan and rise in warm place for about an hour. Bake in preheated 325 deg F oven for 40 to 45 min. Remove from pan and let cool slightly. Serve warm.
For Holidays: Add 3/4 cup chopped cranberries and 1 cup chopped pecans to dough after punching down. Sprinkle 1/2 cup chopped pecans into Bundt pan before putting dough into it.

Homemade Beer Batter Bread
Many years ago someone I worked for gave me a gift at Christmas time. It was a Bread Mix in a box. Not trying to sound snobby,, but I make most of my things homemade. I love to cook and bake. I didn't want to waste the mix by throwing it away so I baked it. I have never had nor heard of Beer Batter Bread. I was pleasantly surprised that this boxed mix tasted so good. When I looked into buying another mix,, honestly I was shocked that it cost about $7.00. I went online and got a few recipes,, yet none were moist or tasted as good. They were all so dry and just crumbled apart. I began experimenting on my own and came up with this recipe. My family LOVES it!! :) I always make Beer Batter Bread when Hubby Smokes Ribs or cooks Chicken Wings on the Grill. It also is a wonderful breakfast with a cup of coffee or tea. I hope you enjoy my recipe!
Beer Batter Bread
3 c. Flour
1 ½ Tbl. Baking Powder
½ Tbl. Salt
¼ cup Sugar
Mix the dry ingredients
Add:
1 can room temperature Beer (12 oz can)
1 egg
Mix well
Melt 1 stick of Butter
Add ½ of the butter to the batter, Mix well
Pour into a greased 9x5 loaf pan
Bake 350* 40 minutes
Pour remaining melted butter on top
continues baking 10-20 longer.. until
golden brown and cake tester comes out clean
cool on wire wrack

Batter Fried Squids Recipe:
Squid - 200 grams
Oil (To deep fry) - As Needed
Dry Mix:
Maida - ¼ Cup
Salt - ½ tsp
Pepper - ½ tsp
Batter:
Maida - 1 Cup
Corn Flour - ½ Cup
Baking Powder - 1 tsp
Salt - ½ tsp
Pepper - ½ tsp
Turmeric Powder - ¼ tsp
Water - 1 Cup
Cooking Instructions:
1. Clean the squid rings, and pat them dry. Add Salt, Pepper and Maida. Mix well.
2. Add all the ingredients under the batter to form a light batter.
3. Heat oil in a pan for deep frying. Coat the squid with the wet batter using a form and deep fry in hot oil until golden brown and crispy.
4. Serve hot.

Batter Bread for Thanksgiving - NOT Low Carb - 11.22.11
Don't watch this video of you are easily tempted. I made the video to show how I ignored my diet for Thanksgiving. This bread is a MAJOR no-no for my low-carb diet.
2 Corrections to the video: 1) The dough rises 3 times, not twice. 2) My mom corrected me via email stating:
THE BATTER BREAD RECIPE WAS FROM MY PILLSBURY BEST OF THE BAKEOFF COOKBOOK THAT I BOUGHT WHEN I WAS 22 YEARS OLD. My whole life it was Mom's Batter Bread, so that's what I'm calling it, since she always made it for holidays.
RECIPE:
Mom's Batter Bread
3 bread pans: 9x5x3 or 10 x 3.5.x2.5
1 c. butter
1 c. sugar
2 c. hot scalded milk
4 slightly beaten eggs
1 egg, beaten to brush tops of loaves
4 tsp. vanilla
2 tsp. salt
2 packages dry yeast softened in ½ c. warm water
8 c. flour
Scald milk in a large pot. Add butter and sugar. Stir until it cools off a bit and is warm (so your eggs will not cook)
Add 4 slightly beaten eggs, salt, vanilla and yeast
Gradually add flour, 1 cup at a time, stir well after each addition. Dough will be sticky, so you may have to butter your spoon.
Butter the inside of the pot so dough does not stick to it as it rises.
Cover with a clean towel and let it rise in a warm place for 1 HOUR
Punch down dough and let rise again for 45 Minutes
Separate into 3 WELL GREASED pans (I used butter). Cover and let rise again for 45 minutes.
Preheat oven to 350 degrees
Brush loaves with beaten egg
Bake 25-30 minutes
Cool for a half hour in the pans resting on cooling racks
Remove bread from pans and let cool completely.
