Batter Bread for Thanksgiving - NOT Low Carb - 11.22.11
Don't watch this video of you are easily tempted. I made the video to show how I ignored my diet for Thanksgiving. This bread is a MAJOR no-no for my low-carb diet.
2 Corrections to the video: 1) The dough rises 3 times, not twice. 2) My mom corrected me via email stating:
THE BATTER BREAD RECIPE WAS FROM MY PILLSBURY BEST OF THE BAKEOFF COOKBOOK THAT I BOUGHT WHEN I WAS 22 YEARS OLD. My whole life it was Mom's Batter Bread, so that's what I'm calling it, since she always made it for holidays.
RECIPE:
Mom's Batter Bread
3 bread pans: 9x5x3 or 10 x 3.5.x2.5
1 c. butter
1 c. sugar
2 c. hot scalded milk
4 slightly beaten eggs
1 egg, beaten to brush tops of loaves
4 tsp. vanilla
2 tsp. salt
2 packages dry yeast softened in ½ c. warm water
8 c. flour
Scald milk in a large pot. Add butter and sugar. Stir until it cools off a bit and is warm (so your eggs will not cook)
Add 4 slightly beaten eggs, salt, vanilla and yeast
Gradually add flour, 1 cup at a time, stir well after each addition. Dough will be sticky, so you may have to butter your spoon.
Butter the inside of the pot so dough does not stick to it as it rises.
Cover with a clean towel and let it rise in a warm place for 1 HOUR
Punch down dough and let rise again for 45 Minutes
Separate into 3 WELL GREASED pans (I used butter). Cover and let rise again for 45 minutes.
Preheat oven to 350 degrees
Brush loaves with beaten egg
Bake 25-30 minutes
Cool for a half hour in the pans resting on cooling racks
Remove bread from pans and let cool completely.

Homemade Beer Batter Bread
Many years ago someone I worked for gave me a gift at Christmas time. It was a Bread Mix in a box. Not trying to sound snobby,, but I make most of my things homemade. I love to cook and bake. I didn't want to waste the mix by throwing it away so I baked it. I have never had nor heard of Beer Batter Bread. I was pleasantly surprised that this boxed mix tasted so good. When I looked into buying another mix,, honestly I was shocked that it cost about $7.00. I went online and got a few recipes,, yet none were moist or tasted as good. They were all so dry and just crumbled apart. I began experimenting on my own and came up with this recipe. My family LOVES it!! :) I always make Beer Batter Bread when Hubby Smokes Ribs or cooks Chicken Wings on the Grill. It also is a wonderful breakfast with a cup of coffee or tea. I hope you enjoy my recipe!
Beer Batter Bread
3 c. Flour
1 ½ Tbl. Baking Powder
½ Tbl. Salt
¼ cup Sugar
Mix the dry ingredients
Add:
1 can room temperature Beer (12 oz can)
1 egg
Mix well
Melt 1 stick of Butter
Add ½ of the butter to the batter, Mix well
Pour into a greased 9x5 loaf pan
Bake 350* 40 minutes
Pour remaining melted butter on top
continues baking 10-20 longer.. until
golden brown and cake tester comes out clean

How to Make Du Pain Frier (Fried Bread in Batter) | Snacks | Cook With Me
Need a vegan alternative to eggy bread? Try our battered bread pakoras. They are moreish and make a great breakfast food.
This recipe will make about 8/10 pieces (depending on your bread slices)
You will need:
2 cups gram flour (besan)
Salt to taste
1/2 tsp turmeric
2 tsp chilli powder (or to your taste)
1/4 cup freshly chopped coriander
3 spring onions, finely chopped
5-6 chillies, finely chopped.
2 cups ( possibly an extra 1/4 cup if your batter is too thick)
4-5 bread slices, cut in halves.
Method:
Mix together the besan, salt, chilli powder, coriander, spring onions, chilli and turmeric with 2 cups of water to make a slightly thick batter. Add extra water if the batter becomes too thick. It needs to be loose enough to stick to the bread slices.
Heat enough oil in a pan and dip the bread slices in the batter. Be sure to coat both sides. Deep fry until golden.
Drain well and serve with ketchup or chutney.

Dough:
• 1 cup lukewarm milk
• 3 Tablespoons granulated sugar
• 1 Tablespoon instant yeast
• 3¼ cups all-purpose flour, plus some more for the working surface
• 2 eggs, whisked
• 2 Tablespoons butter, melted
Cheese filling:
• 12 ounces cream cheese
• 1/4 cup granulated sugar
• 1 Tablespoon vanilla extract
• 1 Tablespoon rice or potato flour
• 1 egg yolk
• 2 egg whites, whipped until stiff
Crumb topping:
• 1/2 cup all-purpose flour
• 1/4 cup granulated sugar
• 1/4 teaspoon baking powder
• 3 Tablespoons butter, softened
Egg wash:
• 1 egg yolk
• 1 teaspoon water
DIRECTIONS
1. To a large bowl, add 1 cup lukewarm milk, 3 Tablespoons sugar and 1 Tablespoon yeast
2. Whisk well, then rest for 15 minutes at room temperature
3. To a stand mixer, add 3 1/4 cups all-purpose flour, 2 whisked eggs and 2 Tablespoons melted butter, blend well
4. Add the yeasted milk mixture and blend/knead for 2 minutes, or until the dough is smooth, not sticky
5. Cover bowl with a towel and let the dough rise 30 minutes at room temperature
6. Dust a working surface with flour and cut the dough into 12 equal-sized pieces
7. Roll each piece into a ball, then flatten with your fingers or a rolling pin
8. Rest 30 minutes at room temperature
9. Make the cheese filling by adding 12 ounces cream cheese to a large bowl, then add 1/4 cup sugar, 1 Tablespoon vanilla extract, 1 Tablespoon rice or potato flour, 1 egg yolk and 2 egg whites that have been whipped until stiff
10. Mix ingredients until smooth and place in the refrigerator until ready to use
11. For the crumb topping, add 1/2 cup all-purpose flour to a medium bowl, then add ¼ cup granulated sugar and 1/4 teaspoon baking powder, whisk well
12. Add 3 Tablespoons softened butter and mix together with your fingers until the mixture has a crumb consistency
13. For the egg wash, whisk 1 egg yolk with 1 teaspoon water
14. Use a small glass or cup to create a well in each bun for the cheese filling
15. Place buns on two baking sheets and fill each bun with the cheese filling, taking care not to overfill or the filling will spill over during baking
16. Sprinkle the crumb topping over each bun
17. Place baking sheets in a pre-heated 230 F oven and bake for 15 minutes initially
18. Remove buns from the oven, brush the dough part of the buns with egg wash, and return to the oven for an additional 12-15 minutes, or until golden brown
19. Let the buns cool completely before serving

MY RATING: 7/10
Buns with a not-too-sweet cream cheese filling. The filling is spot-on but this recipe results in a bun that is a little too dense and bagel-like. The bun’s consistency should be lighter and fluffier, similar to a Hawaiian roll.

It is a batter that can be used for anything you wish to deep fry, from meat to fruit, savoury foods to dessert foods.
It's quick to mix up and does not require any special ingredients, just regular items from the pantry.
