How To make Sweet Potato Casserole (Microwave)
2 16 oz cans sweet potatoes
14 oz Can pineapple tidbits in
Unsweetened juice, undrained 4 T Butter or margarine
4 T Dark brown sugar,
-firmly packed 1 1/2 c Miniature marshmallows
Butter or margarine 1. Drain potatoes and discard liquid. Drain pineapple and set
pineapple and juice aside. 2. In a small, heat-resistant, non-metallic bowl, melt butter in
Microwave Oven 30 seconds. 3. Place potatoes in medium-sized bowl and mash with a potato
masher or fork. 4. Add melted butter and brown sugar. Stir until well combined.
5. Stir in pineapple juice until desired consistency is reached.
Fold in pineapple tidbits and marshmallows. 6. Butter a shallow, 1 1/2-quart, heat-resistant, non-metallic
casserole and spoon potato mixture into casserole. 7. Heat, uncovered, in Microwave Oven 5 to 6 minutes or until
potato mixture is heated through and marshmallows begin to melt.

1/2 cup white sugar
1/2 cup brown sugar
pinch of salt
pinch of nutmeg
1 teaspoon cinnamon (season to taste)
1 tsp lemon zest
2 tbsp all purpose flour
1/2 tsp vanilla extract
1/2 cup whole milk or half & half
4 tbsp butter
2 beaten eggs
Topping:
1 Cup crushed pecans
5 tbsp melted butter
1 cup brown sugar
salt and cinnamon to taste
Directions:
Puncture potatoes all over with a fork or sharp knife and roast in the oven at 350 degrees for 45-60 minutes or until fork tender. Preheat oven to 325. Once potatoes have cooled enough to handle safely, cut them in half and remove the potatoes from the skin, into a mixing bowl. Begin mashing the potatoes with a fork or potato masher. Add white and brown sugar, salt, nutmeg, cinnamon. Use hand mixer for smoother consistency if desired. Mix in butter and milk/cream. Add lemon zest and vanilla extract. Taste and adjust seasoning to your preference! Once the seasoning is just right, add your flour and mix to combine. Next, mix in your beaten eggs - set aside.
Make your topping by adding the pecans to a mixing bowl with flour, melted butter, brown sugar, salt, and cinnamon.Mix until it forms a crumble and is coated well in the butter. Pour sweet potato mixture into your casserole or baking dish and top with either your pecan crumble or marshmallows. Bake at 325 for about 30 minutes or until browned and bubbly.

Sweet Potato Casserole (Vegan, WFPB)
If you have been following me for any amount of time, you will know about my love of sweet potatoes. Growing up I think the one plant food that kept me alive was the sweet potato. For as long as I can remember they have been one of my all time favorite foods. Now with that being said, growing up I don't think I ever had a sweet potato without being topped with half a stick of butter and half a cup of brown sugar. I clearly do not eat my sweet potatoes like that any more, but I have to say I enjoy them just as much if not more now that I make them healthfully. Growing up I remember we would cook our sweet potatoes in the microwave or in the oven. Now those are both valid ways to cook a sweet potato, but my favorite way to cook sweet potatoes is in the InstantPot on the pressure cook setting for 30 minutes. I know a lot of people think that is way too long, but I guarantee those people haven't tried my InstantPot sweet potato recipe yet. Because if you have, you will know that it produces what I would say is the sweetest sweet potatoes I have ever had the pleasure of eating. And that really makes a difference for recipes like todays sweet potato casserole. It does call for some maple syrup to ensure it is rich enough, but with the potatoes being cooked perfectly before hand they don't need much to make this a delicious dish. I realize that some may be used to adding a topping to their sweet potato casserole. You can always go a head and make a topping for this dish, I opted to go without to make it an even more of a low fat vegan compliant dish. Sweet Potato Casserole
2 1/2 lb, can (about 3 cups) sweet potatoes, drained
1/3 cup sugar
2 eggs
1 Tablespoon vanilla
1/2 cup butter, softened
TOPPING:
1 cup brown sugar
1/3 cup flour
1/3 cup butter, room temperature
1 cup pecan pieces
Preheat oven to 350°.
Beat together sweet potatoes, sugar, eggs, vanilla, and butter. Pour into a non- stick sprayed 8 inch square baking dish.
In a medium sized bowl, work together the brown sugar, flour, butter and pecan pieces for the topping. Spread over the sweet potato mixture.
Bake 40-45 minutes or until top is lightly browned.
Center may not be set but will firm up as it cools. Allow to rest appropriately 15 minutes for casserole to set before serving.
