How To make Sweet Potato Streusel Casserole
4 Large sweet potatoes
1/2 c Butter
2 Large eggs
3/4 c Milk
3/4 c Brown sugar, firmly packed
1/2 c Bourbon
1 t Cinnamon
1/2 t Salt
1/4 t Nutmeg
1/3 c Old fashion oats, uncooked
1/4 c Flour
3/4 c Finely chopped pecans
1). Bake potatoes until tender. Split; scoop pulp into large bowl,
discarding skins. 2). Melt 1/4 C butter and beat into potatoes.
3). Beat in eggs, milk, 1/4 cup brown sugar, bourbon, cinnamon, salt and
nutmeg. 4). Spread into lightly greased 1 1/2 quart broiler safe casserole.
5). COmbine remaining 1/2 c brown sugar, oats and flour in a small bowl.
6). Cut in remaining 1/4 c butter until mixture is size of peas.
7). Stir in pecans. Sprinkle over potato mixture.
8). Bake in 350 oven for 30 minutes or until heated through. For crisper
topping, broil 4-5 inches from heat for 3 min or until browned.

INGREDIENTS
For the potatoes:
- 5 lb sweet potatoes, peeled and cut into 1/2-inch pieces
- 3 1/2 tbsp all-purpose flour
- 1/3 cup light brown sugar
- 1 tsp salt
- 1/2 cup maple syrup
- 1 cup heavy cream
For the pecan streusel
- 1 1/2 cups chopped toasted pecans
- 2 tbsp all-purpose flour
- 1/4 cup light brown sugar
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp ground nutmeg
- 4 tbsp unsalted butter, cut into 1/2-inch cubes
INSTRUCTIONS
- Place the peeled and chopped potatoes in a large stock pot, and fill with cold water and 1 tbsp salt, covering the potatoes by 1 inch. Bring the water to a boil over medium heat, reduce it to a simmer, and cover. Cook the potatoes until they are tender but not mushy. You want a slight texture since they will cook in the oven, 15-20 minutes.
- Preheat oven to 350°F.
- Once the potatoes are cooked, drain them and place in a greased 9×13 baking dish. Sprinkle the potatoes with brown sugar, flour, and salt. Pour over the maple syrup and heavy cream.
- In a small bowl, combine the chopped pecans, brown sugar, flour, salt, cinnamon, and nutmeg. Mix to combine. Work the pieces of the butter into the dry mixture until it resembles coarse sand. Sprinkle the streusel over the prepared potatoes.
- Bake in the preheated oven until the liquid is bubbling throughout the center and the streusel is browned, 55-60 minutes.

Ingredients
Casserole:
3–4 large sweet potatoes
14 dates, pitted
½ cup flax milk (or cashew/hemp/coconut/almond)
½ cup brown sugar
Streusel topping:
1 cup flour
1 Tbsp ground ginger
2 tsp cinnamon powder
¼ tsp cardamom
¼ cup brown sugar
¼ tsp salt
¼ cup molasses
¼ cup coconut oil, melted
½ cup chopped pecans
Steps
1.) Add pitted dates to a medium bowl and cover with warm water. Let soak for at least an hour or up to overnight.
2.) Clean and scrub sweet potatoes, poke with holes all around surface, place on a small baking sheet and roast in a 375ºF oven for one hour, or until cooked completely through. Remove from oven and allow to cool completely. Peel off skins. Add to a large bowl and mash with a potato masher.
3.) In a blender, blend dates, milk and brown sugar until smooth. Fold into the mashed sweet potatoes and pour mixture in an oiled baking dish.
4.) Make the streusel. In a large bowl, combine the flour, ginger, cinnamon, cardamom, brown sugar and salt. Pour in the molasses and combine. Add the melted coconut oil and chopped pecans. It should look like coarse sand.
5.) Sprinkle streusel over the sweet potatoes, and bake at 350ºF degrees until streusel hardens, nuts toast, and sweet potatoes heat through.
