One Pot Pasta Primavera
Delicious quick meal! I added some cooked chicken to mine toward the end of the cooking time.
4 cups vegetable or chicken broth
8 ounces linguine or fettuccine (weighed uncooked)
1 medium onion, sliced thin
2 cups broccoli pieces
1.5 lbs asparagus, ends snapped off and cut into 2-inch pieces, I used one bunch from the grocery store.
1 cup sliced mushrooms
3-4 large cloves garlic, minced
1/4 teaspoon crushed red pepper flakes
1 teaspoon salt
1/2 tsp freshly ground black pepper
2 tbsp olive oil
3/4 cup frozen or fresh peas
1/2 cup fresh parsley, chopped
1/4 cup heavy whipping cream
2 tbsp grated Parmesan cheese
1 tsp freshly grated lemon zest
Place all veggies (except peas and parsley) in a large skillet or cooking pot (one that allows the pasta to lay flat) along with the broth, pasta, pepper flakes, salt, pepper and olive oil.
Bring to a boil and cook, stirring constantly for about 7 minutes.
At the end of the 7 minutes, add the peas, parsley, cream, lemon zest and parmesan cheese. Cook an additional 2-3 minutes until pasta is the tenderness you like.
Allow to stand for 5 minutes before serving to allow the sauce to thicken.

Peanut Butter Pasta Primavera recipe
This springtime pasta recipe tosses fettuccine with fresh veggies and herbs and uses olive oil, garlic, lemon juice, and peanut butter to create a light sauce to dress the pasta.
While many primavera pasta sauces use cream this vegan recipe maintains its creamy texture by using peanut butter with starchy pasta water. The result -- a lighter take on pasta primavera that's just as delicious but with a nutty twist!
