How To make Tofu In Black Bean Sauce
3 tb Peanut or light sesame oil
5 ea Garlic cloves
-- finely chopped 1 tb Ginger, finely grated
3 tb Chinese black beans
3 tb Onions, coarsely chopped
2 tb Soy sauce
2 tb Barley or rice malt
2 c Water
3 tb Kuzu, dissolved in...
1/3 c Water
1 lb Firm tofu, sliced
2 ts Dark sesame oil
In a wok, heat oil until nearly smoking. Add garlic and ginger, and stir-fry rapidly over high heat for 1 minute. Add black beans, and stir for 30 seconds. Add onions, and stir for 2-3 minutes.
Add soy sauce, sweetener, and water. Bring to a boil. Add kuzu. Stir with a wooden spoon until it thickens and becomes clear and shiny. Stir in tofu and dark sesame oil, and simmer 2-3 minutes. TOFU AND MUSHROOMS IN BLACK BEAN SAUCE ✨
6-8 pcs white button mushrooms, sliced
300 g firm tofu, cut into squares
2 cups baby string beans
1 medium-sized onion, sliced
2 tbsp. maple syrup
2 tbsp. black bean sauce
1 tsp chili garlic sauce
1 tbsp. hoisin sauce
2 tsp crushed ginger
1 tbsp. soy sauce
1 tbsp. crushed garlic
For the cornstarch slurry:
1 tsp cornstarch
1/4 cup water
Method
In a non-stick pan, add the tofu and cook each side for 3-5 minutes. After that, set it aside in a bowl. Using the same pan, sauté the onion, mushrooms, string beans, crushed ginger, crushed garlic, soy sauce, hoisin sauce, chili garlic sauce, maple syrup and black bean sauce. Stir to combine and let it simmer for 3 minutes.
Add the cooked tofu pieces and mix it well. Make the cornstarch slurry by dissolving 1 tsp cornstarch in 1/4 cup of water. Pour the cornstarch slurry into the pan and give it a good stir. Transfer into a plate and enjoy this with a delicious bowl of rice.

Steamed Tofu in Black Bean Sauce
Steamed Tofu in Black Bean Sauce is light yet flavorful. It is also incredibly quick and easy to make. A great dish to serve with rice especially in summer.
The tofu is delicate, silky smooth and dressed with a savory black bean sauce.
Ingredients:
For the Tofu
10.5 oz silken tofu (about 300grams)
1/8 teaspoon sesame oil
pinch of salt
ground Sichuan pepper
2-3 teaspoons julienned ginger
For the Black Bean Sauce
olive oil
1/2 teaspoon minced ginger
2-3 garlic cloves, minced
1 tablespoon fermented black beans, briefly rinsed
1 tablespoon oyster sauce
1/2 tablespoon soy sauce
1/2 cup plus 1/2 tablespoon water, divided (127.5ml)
1/2 tablespoon cornstarch
1 stalk of scallion, thinly sliced on a bias
