How To make Traditional Mincemeat 14
2 lb Ground beef
1 lb Beef suet
3 1/2 lb Apples, peeled, cored &
Chopped 2 lb Seedless grapes
1 1/2 lb Currents
3/4 c Candied citron
3/4 c Candied lemon peel
2 lb Light brown sugar
1 tb Salt
1 c Molasses
3 c Apple cider
1 ts Mace
1 tb Cinnamon
1 tb Ground cloves
1 tb Allspice
2 ts Nutmeg
1 lb Chopped walnuts
1/4 c Lemon juice
1 c Brandy
Place meat in a very large saucepan with just enough water to cover & simmer for 1/2 hour. Drain meat & return to pan. Add all remaining ingredients, except lemon juice & brandy. Bring mixture to a boil & reduce heat & simmer for 1 1/2 hours, stirring occassionally. Stir in lemon juice & brandy. Ladle mincemeat into sterilized jars & seal, cool & store. Allow the mincemeat to mature for at least 6 weeks before using.

Mince pies / mince meat / These delicious treats that for some reason we only enjoy at Christmas are quite old, ancient in fact. The earliest records utilise meat with fruit, sugar and spices, to preserve the meat. Hence 'minced meat'
Nowadays mince pies are mostly fruit with sugar and spices, some beef suet adds a little extra flavour but you can omit that for a vegetable suet of course. Please try making your own mice meat for your mince pies.
Mince pie pastry makes 12 - 14 deep filled pies
Plain flour 375g / 13.2oz
Unsalted butter 250g / 8.8oz
Caster sugar 125g / 4.4oz
Egg 1
Cold water to bind
Mince meat filling for pies
Eating apples 2
Raisins 175g / 6.2oz
Sultanas 112g / 4oz
Currants 112g / 4oz
Mixed or candied peel 55g / 2oz
Candied ginger 55g / 2oz
Beef or vegetable suet 112g / 4oz
Brown sugar 175g / 6.2oz
Chopped almonds or mix nut 50g
Zest and juice orange and lemon 1 each
Brandy 150ml / 0.26pin
Mixed spice 2 tsp
Ground cinnamon 1/2 tsp
Nutmeg 1/2 tsp
Orange blossom 1/2 tsp
Real vanilla extract 1 tsp

Mincemeat Loaf Cake - Easy Christmas Baking
This lovely moist loaf cake, with lots of mincemeat as well as cherries and sultanas is so delicious. It is a great alternative to very rich Christmas cakes, with the same decadent flavours but a lighter texture. So easy to make too.

Hey guys :) Welcome back to What's for tea, and here's the seventh instalment of my festive food & drink ideas :) Tonight I'm making a wee batch of sweet mince pies! Eaten by just about everyone at this time of the year....they are so so popular. I Used-
100g Golden caster sugar (you could use plain caster sugar if you want :)
1 Beaten egg (optional)
350g Plain/all purpose flour
One tablespoon icing sugar (for decoration)
250g Cold unsalted butter (cut into cubes)
200g Sweet mincemeat (about 9 teaspoons)
