How To make Vegetable Broth Mix
4 tb Celery salt
4 tb Dried parsley flakes
6 ts Garlic powder
6 ts Salt
6 ts Ground savory
2 ts Dried marjoram
2 ts Dried thyme
1 ts Pepper
1 ts Turmeric
1 ts Ground sage
Combine all ingredients and mix well. Mix again before using. Store in a jar.

Hi guys, welcome to Marks Irish Kitchen where i do family friendly recipes everyone can enjoy. Todays video is for a traditional Irish vegetable soup or broth. This is a simple soup and more known as being from the North of Ireland. This soup has been made for generations as a hearty and healthy way to keep people fed. It is a cheap wholesome soup that is really simple to make. Its known in Ireland as a comfort food plus its a great way to top up your 5 a day.
Although i make mine with vegetable stock, it is traditionally made with either a “soup bone” which is a shin of beef or some chicken bones and meat off the carcass.
INGREDIENTS
180g (3/4 cup) soup mix *(see below)
1 large carrot washed and sliced
1 large leek washed and sliced
3 stalks soup celery ( if you cant get soup celery use as dark a celery as you can) you will be using the leaves as well.
1-1.5 litres of stock depending on how thick you like your soup.
Handful flat leaf parsley
METHOD
Spray a large saucepan with some low calorie oil and add the leeks,carrots and celery and cook for 3-4 minutes.
Then add the barley mixture (you can soak the barley mixture overnight before using to cut down on the simmering time).
Then add the stock and the parsley. Season to taste but go easy on the salt as the barley mixture is quite salty.
Simmer for 2.5-3 hours until the barley and peas mixture is softened and plumped up(this will be less approx 1 hour if the barley mixture has been soaked).

How to Make Vegetable Stock | Vegetable Broth Recipe
Learn how to make easy and basic vegetable stock at home. You can use the stock for soups, risotto dishes and more!

RECIPES WITH VEGETABLE STOCK:
Broccoli Soup:
Pumpkin Soup:
Mushroom risotto:
Ingredients:
2 onions
2-3 carrots
4-5 garlic cloves
4 celery stalks with the leaves
1/4 bunch parsley
3-4 sprigs fresh thyme
2 bay leaves
1 tsp black peppercorns
1 tsp salt
2-3 tbsp olive oil
12 cups (2.8L) water
Directions:
1. Roughly chop all the vegetables except garlic cloves.
2. In a large pot heat olive oil. Add chopped onions, chopped celery and whole garlic cloves. Cook over medium heat for 5-7 min, stirring frequently.
3. Add carrots, celery leaves, parsley, thyme, bay leaves, peppercorns and salt. Pour water and bring to a boil. Reduce the heat to low and simmer for 1.5 – 2 hours.
4. Take the pot off the stove and remove all the vegetables with a slotted spoon. Set your strainer over a big bowl and Pour the stock through.
Notes:
• You can use the stock fresh or freeze it for months.
• you may need more water.

How to make vegetable bouillon at home! This freezer bouillon is a great thing to have on hand for those times when you don’t have veggie stock or just don’t want to buy any. Add a few teaspoons to your soup or sauce, and you’ll end up with a rich flavor base with very minimal effort. Inspired by both curry paste and a brilliant ‘Souper Mix’ recipe from The River Cottage Preserves Handbook, this freezer bouillon is essentially just a combination of different, whole food aromatics that you’d typically find at the base of any soup or broth, plus salt.
