How To make Vegetable Rice Pancakes
3 c Cooked brown rice
1 c Grated carrots
1/2 c Finely chopped onions
1/4 c Snipped fresh parsley
1 Garlic clove; minced
1 ts Salt
1/4 ts Ground black pepper
2 Eggs; beaten
1/2 c Whole wheat flour
-OR- all-purpose flour 1/4 c Vegetable oil
Combine all ingredients except oil. Form into 12 thin patties, pressing firmly with hands. In large skillet, cook patties in heated oil until brown, turning once. Serve with dairy sour cream or yogurt, if desired. Each serving provides: * 243 calories * 5.7 g. protein * 11.6 g. fat * 29.6 g. carbohydrate * 390 mg. sodium * 91 mg. cholesterol NOTE: Optional ingredients are omitted from the nutritional calculations. Ingredients
1 cup - Red Rice (Broken Rice) or local Rice of your choice (200 ml cup measurement)
(Wash & soak the Rice for 2 to 3 hours)
Grated Coconut - 1/2 cup
Salt as needed
Poha (flattened Rice) 1/4 cup (optional)
Coconut oil or Ghee
Water - 1 cup (adjust as needed)
Rest the batter for few hours or overnight in refrigerator..

To Make Mini Vegetable Pancakes
Onion - 1 No.
Garlic - 5 Cloves
Green Chilli - 3 Nos ( optional )
Cabbage - 1 Bowl
Carrot - 2 Nos

Coriander Leaves
Wheat Flour - 1/2 Cup (Buy: )
Chana Dal - 1/2 Cup (Buy: )

Method:
1. Take oil in a pan. Add thinly slices onions, garlic, chopped green chillies, shredded cabbage, carrot and saute for 2-3 mins.
2. Add salt, pepper powder, cumin powder, Kashmiri chilli powder and mix well.
3. Add water, mix and cover the pan with a lid. Coolk for 5 mins.
4. Transfer the vegetable mixture to a bowl and add chopped coriander leaves, wheat flour, roasted chana dal powder and mix well.
5. Add water to the veggie mixture for a perfect consistency.
6. Heat a tawa/pan. Take a spoonful of the vegetable mixture, place it on the tawa and gently press it in.
7. Cook the pancakes on both sides for 3 minutes each.
8. Once the pancakes are golden brown in color, remove them from the pan and serve them hot with tomato ketchup.
Mini Vegetable Pancakes is a wonderful breakfast/snacks recipe perfect for kids as well as adults who are very fussy with eating a lot of vegetables. This is an instant pancake recipe which is like a thick small dosa, easy to eat. I have used vegetables I like, but you can add any vegetable of your choice to this recipe and make it even more interesting. You can pack these mini vegetable pancakes for your children's snack boxes. These pancakes taste good with tomato ketchup or mint chutney. Do try this recipe and enjoy.

Rice pancakes or veggie pancakes are a healthy gluten-free breakfast option with very little oil and loads of veggies. Any type of rice can be used to make these pancakes, to make it more healthy you can even use Brown Rice; soak the brown rice a little longer as it needs more time to cook compared to white ones. Add vegetables as per your choice and taste. These pancakes keep you fuller for a longer time…enjoy and don’t forget to share your feedback.
Ingredients-
Rice (Any rice) -1 cup (Soaked for 3-4 hours)
Green chili -2
Boiled and grated potatoes -2
Chopped veggies –
Tomato -1tbsp
Carrots -1tbsp
Capsicum -1tbsp
Onion -1tbsp
Coriander leaves -1tbsp
Cumin Seeds -1tsp
Grated ginger -1tsp
Red chili flakes -1tsp
Salt -as per taste
Baking soda/fruit salt -1/2tsp
Oil for shallow frying
Method –
1-Blend the soaked rice to a coarse paste. Add little water while blending, the batter should not be thin.
2-Add the grated potatoes and all the chopped veggies. Mix well. After adding veggies the batter will become thick.
3-Mix cumin seeds, grated ginger, salt, red chili flakes, and baking soda. Mix well and the batter is ready.
4-Heat a non-stick pan/Tawa, sprinkle some oil. Spread a ladle full of batter, cover, and cook for 1-2 minutes.
5-Flip it gently, sprinkle some oil on sides. Cover and cook for 1-2 minutes again. Till the pancake is golden and crisp.
6-Serve it hot with the dip of your choice.
