How To make Vegetarian Sloppy Joes
1 tb Vegetable oil
1 md Onion; chopped
1 md Green pepper; chopped
3 c Cooked brown rice
32 oz Mexican-style pinto beans
-- (canned) 3/4 c Hickory smoke barbecue sauce
4 Whole grain buns
Heat oil in large skillet over medium-high heat. Add onions and green pepepr; cook 2 to 3 minutes. Add rice, beans and barbecue sauce. Simmer 10 to 15 minutes, until heated through. Serve on buns. Each serving provides: * 542 calories * 19.2 g. protein * 9.4 g. fat * 96.4 g. carbohydrates * 3.2 g. dietary fiber * 17 mg. cholesterol * 1637 mg. sodium. Hey guys and gals! Yes! it is time for another incredible vegan recipe and so today I am sharing with you all my recipe/version of the infamous lentil sloppy joe. Growing up I never experienced eating sloppy joes due to the fact that my mom never cooked red meat at home, but I ALWAYS remember watching that famous sloppy joe scene on the movie 'it takes two' with the Olsen twins and thinking it looked so gross but also wishing that I could eat one myself. So fast forward years later I'm now a vegan and well I wanted a sloppy joe and I freaking got myself a dang sloppy joe and an incredibly delicious and healthier one at that!! I hope yall give it a try and LOVE it!!
Ingredients **makes 4 servings
2 Tbsp veg oil
1/2 a white or yellow onion (diced)
1/2 a green bell pepper (diced)
1 red chili pepper (deseeded and diced) or 1/2 tsp chili powder
2 Cloves of garlic (minced)
1 tsp cumin
1/2 tsp smoked paprika
S+P to taste
1 C brown lentils (rinsed and drained)
1 C water
1 C vegetable stock
1 C tomato sauce
2 Tbsp sugar
2 Tbsp vegan-friendly Worcestershire sauce or 1Tbsp ACV+ 1 tsp yellow mustard
1-2 Tbsp ketchup

Ingrdients:
OPTIONAL:
1 Quart Veggie Stock: For cooking lentils, to make your own stock check the link.
1 Cup Dried Lentils
1 Tablespoon Olive Oil - FOr cookingt veggies
1/2 a White Onion - Finely Diced
1 Yellow Bell Pepper - Finly Diced
1/2 Cup Cellery - Finly Diced
1/2 Cup Carrot - Greated
SAUCE:
1 Cup Katchup
1 Tablespoon Dijon Mustard
3/4 Teaspoon Garlic Powder
3/4 Teaspoon Cumin
1/4 Teaspoon Hayanne Pepper
Salt, and Pepper to taste
To Taste:
Any seasoning you want to add; Basil, Chili Powder, Curry Powder. Etc Have fun with it.
