In this video I make low carb, diabetic friendly, sloppy joe's. It's an awesome recipe! Let me know what you think!
HERE'S THE RECIPE:
-Brown 2 pounds of ground beef
--Drain & set aside
-Dice up a large white onion
-Dice up large red bell pepper
--Set both aside
-Melt tbsp of coconut oil in a clean skillet (not the same skillet as the browned ground beef)
--Add diced onion and pepper
---Cook until both onion and pepper are tender and the onion is translucent
--Next add 6 ounce can of tomato paste
--1/2 cup of chicken broth
--1 tbsp of apple cider vinegar
--1 tbsp Tony's Cajun seasoning
-Then add browned ground beef into the mixture
--Stir occasionally for about 10 minutes or until the sauce thickens
-Spoon mixture onto lettuce leaves and eat up! Think tacos and/or PF Changs lettuce wraps.

OLD SCHOOL CAFETERIA STYLE SLOPPY JOE
This definitely should take y'all back to your childhood school days
We all had this growing up in school and still love it
1 tablespoon unsalted butter
1/4 cup green bell peppers finely diced
1/4 cup onions finely diced
1/4 cup celery finely diced
1 teaspoon garlic minced
1 lb. ground beef use a good quality 80/20
2 Tablespoons Worcestershire sauce
8 oz tomato sauce
1/2 cup ketchup
1-2 Tablespoons prepared yellow mustard
1-2 tablespoons brown sugar
1/2 teaspoon paprika
1/4 teaspoon cumin
1/4 teaspoon chili powder
1tsp uncle steve shake
4 buns buttered and toasted
Instructions
Melt butter in a large skillet.
Add bell peppers, onions and celery and saute until tender.
Add garlic and saute until fragrant (about 2 minutes).
Remove vegetables from pan and set aside.
In the same skillet, brown the ground beef,add chili powder,cumin,paprika and Worcestershire sauce
Drain the ground beef (leave beef in skillet) and stir in the cooked vegetables. Set aside.
In a bowl, stir together tomato sauce, ketchup, mustard, brown sugar, and seasonings
Taste and adjust the seasoning to your liking.
Add sauce mixture into the skillet and stir until everything is combined.
Simmer for about 5 minutes (stirring occasionally) and then cover and turn off the heat to allow the sauce to thicken.
When the sauce is no longer runny, spoon mixture onto the prepared toasted buns.

Scott Elley's Sloppy Joes

Yield: 90 to 100 servings
Ingredients
35 pounds meatloaf mix (equal amounts of ground beef, ground veal and ground pork)
1 to 1-1/2 cups Worcestershire Sauce
6 large Spanish onions, coarsely chopped
6 red peppers, coarsely chopped
6 yellow peppers, coarsely chopped
6 orange peppers, coarsely chopped
6 green peppers, coarsely chopped
Salt
2 tablespoons dried oregano
4 tablespoons granulated garlic
1 gallon barbeque sauce, homemade or store bought
2 tablespoons olive oil
36 sweet Italian pork sausages, casings removed
90-100 fresh hamburger buns or rolls, for serving
Directions
Divide the meatloaf mix between 2 large commercial-size pots and brown the meat for 3-5 minutes under a high flame. Drain most of the fat, leaving a little in for seasoning. Add the Worcestershire Sauce and mix well. Divide the onions and peppers between the 2 pots, add salt and crush 1 tablespoon of the oregano between your hands into each pot. Divide the garlic between the two pots and stir everything together. Cook for 3 to 5 minutes. Add 1/2 gallon of barbeque sauce to each pot, cover and simmer over low heat for 30 minutes.
Heat the olive oil in 2 large frying pans, add the sausages and cook for about 5 to 8 minutes, until no longer pink. Drain any fat from the sausages. Add the sausages from each frying pan to the pots of barbeque meatloaf mixture, and continue cooking, stirring occasionally, for about an hour. Serve over hamburger buns.

RECIPE:
1 tablespoon vegetable oil
1 medium onion, chopped
1/2-3/4 green or red bell pepper, finely chopped
1 celery stalk, finely chopped
1 Carrot, peeled and shredded
4 cloves garlic, minced
Coarse salt and ground pepper
1 pound ground beef
1 can (15 ounces) tomato sauce
1/4-1/2 cup ketchup
1 tablespoon Worcestershire sauce (to taste)
4 hamburger buns, split and toasted
In a large skillet, heat oil over medium-high heat. Add onion, bell pepper, celery, carrot; season with salt and pepper. Cook, stirring frequently, until vegetables are softened, 5 to 7 minutes, add garlic at the end and cook for a minute more.
Add ground beef to skillet. Cook, breaking up meat with a wooden spoon, mixing with veggies until it is no longer pink, 6 to 8 minutes.
Stir tomato sauce, ketchup, and Worcestershire sauce into beef mixture in skillet. Simmer until thickened, stirring occasionally, 6 to 8 minutes.
Season the mixture with more salt and pepper, as desired. Taste to see if you want to add more ketchup or worcestershire sauce. Spoon onto buns, and serve immediately.
