How To make Veggie Bean Sloppy Joes
1 md Onion chopped
1 md Green pepper chopped
3 c Cooked brown rice
2 16 oz. cans Mexican style
Pinto beans 3/4 c Barbeque sauce
x Buns, rolls, corn bread - What ever you'd like to put Underneath Saute onions and green peppers until tender crisp. Add rice, beans, and barbeque sauce. Simmer 10-15 minutes until heated through. oh yea Sloppy Joes done two ways was a success! If you swap out the 2 meats then make sure you change amounts of ingredients ie the crumbles were 14 or 16 ounces versus the lentils being 2 cups.

Vegan Sloppy Joes | Homestyle, Hearty, and Easy
Today I'm making Vegan Sloppy Joes using cauliflower, soy chorizo and pinto beans. The sauce is made from ingredients you may already have on hand! See the full recipe below.

1 cup vegan chorizo sausage (about half the package) I get mine at Trader Joe’s its called Soyrizo. If you substitue another kind of tofu or meat replacement you may want to add additional seasonings - the chorizo is packed with flavor already.
2-3 cups chopped cauliflower or cauliflower rice (you can find this in the freezer section too)
1 can pinto beans (drained and rinsed)
1 cup ketchup
3 tablespoons dijon mustard
1 teaspoon onion powder
1 clove garlic
Sauté the chorizo in a little olive oil until it starts to cook through and brown. Add the cauliflower rice and stir. Add 1/4 cup of water and cover. Cook until tender (about 8 minutes)
Then add ketchup, mustard, onion powder, garlic and stir. Allow to cook a few minutes so flavors can come together. Keep adding water if the mixture gets too dry.
Once cooked through, add the drained and rinsed pinto beans and stir to combine. Allow to cook a few more minutes until the beans are heated through.
Serve on a toasted roll with sliced red onion and spicy pickles.
This recipe made me about 4 generous sloppy joes. (the rolls I am using are not hamburger bun sized they are like kaiser rolls)
