How to Make Chicken Madras - Ultimate Indian Cuisine BIR Chicken Madras
In my first cookbook, 'The Curry Guy', I featured a recipe for curry house style lamb Madras curry. This is essentially the same recipe but I have cooked the Madras sauce with chicken and also scaled it down so that the curry is the same size as a normal curry house portion to serve one or two. INGREDIENTS
2 – 3 tbsp rapeseed (canola) oil
1 tbsp garlic and ginger paste
3 green bird’s eye chillies – thinly chopped in
1 tsp turmeric
1 tbsp ground coriander
1 tbsp cumin
1 tbsp mixed powder
1 tbsp Kashmiri chilli powder
70ml tomato puree
3 dried chillies
3 cardamom pods – smashed
Roughly 300ml base sauce
400g (just under a pound) chicken tikka
1 tsp dried fenugreek leaves (kasoori methi)
1 tbsp smooth mango chutney
Juice of one lime
Salt to taste
3 tbsp finely chopped coriander

-ausreichend Öl (3-4EL)
-1 Hähnchenbrust
-1 Zwiebel kleingeschnitten
-8 Zehen Knoblauch, kleines Stück Ingwer
(Kleingehackt oder gepresst)
-2EL Tomatenmark mit etwas Wasser vermischt
-1EL madras Curry Pulver, 1/2EL Chili, 1/2EL paprika, 1TL Salz, 2 Prisen Kasuri Methi (getrocknete Bockshornkleeblätter)
-Koriander kleingehackt
-1/4 Zitrone
-1EL Joghurt
-Kokosnussmilch (Angabe im Video)
Im Video erwähne ich wieviel Wasser dazu muss, ich rede da von „Bechern“, 1 Becher Wasser = 250ml, ein halber Becher Wasser= 125ml.

-1 onion chopped
-8 cloves of garlic, small piece of ginger
(Chopped or grated)
-2tbsp of tomato paste mixed with a little water
-1tbsp Madras curry powder, 1/2tbsp chilli, 1/2tbsp paprika, 1tsp salt, 2 pinches Kasuri Methi (dried fenugreek leaves)
-Coriander (chopped)
-1/4 lemon
-1tbsp yogurt
-coconut milk

A lip-smacking classic chicken recipe from the land of Madras.
MADRAS CHICKEN
Ingredients
500 grams chicken on bones, cut into 2 inch pieces
Crushed black peppercorns to taste
2½ tsps red chilli powder
2½ tsps cumin seeds
1½ tsp coriander seeds
1½ tsp fennel seeds
1 tbsp oil
1 inch cinnamon stick
2 bay leaves
2 green cardamoms
1 tsp garlic paste
1 large onion, sliced
¾ cup tomato puree
½ tsp turmeric powder
1½ tsps coriander powder
Salt to taste
1½ tsps lemon juice
A pinch of dried fenugreek leaves (kasuri methi)
Chopped fresh coriander for garnish
Method
1. Take chicken in a bowl. Add black peppercorns and 1½ tsps red chilli powder. Mix well and set aside to marinate for 30 minutes.
2. Dry roast 1½ tsps cumin seeds, coriander seeds and fennel seeds together in a non-stick pan. Transfer the roasted mixture in a blender and grind to a fine powder.
3. Heat oil in a deep non-stick pan, add remaining cumin seeds, cinnamon, bay leaves and green cardamoms. Sauté till fragrant.
4. Add garlic paste, onion and sauté till it turns golden brown. Add chicken and cook for 5-6 minutes on medium heat, stirring occasionally.
5. Add tomato puree. Cook on medium heat till oil separates. Add turmeric powder, remaining red chilli powder, coriander powder, salt, lemon juice and kasuri methi. Mix well. Cook for 4-5 minutes on medium heat.
6. Cover and cook on medium heat for 6-7 minutes or till chicken get cooked.
7. Transfer on a serving plate.
8. Serve hot, garnished with coriander.
