How To Make Christmas Brownies (Mint Brownies)

Christmas Brownies
Brownie Layer
1 Box of Duncan Hines Chewy Fudge Brownie Mix
Add 1/4 cup of cocoa powder to mix and substitute one stick of melted salted butter for the oil. Bake according to package directions in a 9x13 pan. Do not over bake!!
Allow brownies to cool completely.
Cream Cheese Filling
1/2 Cup of Butter at room temperature (I used salted)
4 oz of Cream Cheese at room temperature
2 1/2 Cups of Powdered Sugar
1 Tsp of Mint Extract (more can be added if you want a more minty flavor)
Green Food Coloring (recipe calls for 5 drops. I use up to 10 for a darker color)
Using an electric mixer blend together butter and cream cheese until creamy. Add powdered sugar and mix on high speed until fluffy. Add mint extract and food coloring and mix until blended. Spread over brownies and refrigerate for at least 30 minutes or longer.
Fudge Topping
1 oz (4 small squares) of Unsweetened Chocolate
1 Cup of Sugar
1/2 Cup of Whole Milk
1/3 Cup of Butter (I used salted)
1 Tsp of Vanilla Extract
Mix all ingredients except vanilla into a heavy bottom saucepan. Let it come to a full rolling boil, stirring constantly. Boil for 1 minute and remove from heat. Stir occasionally for the next 15 to 20 minutes. Add vanilla. Pour chocolate over chilled brownies and spread evenly. Place brownies back in the refrigerator for one hour. They're even better if you let them sit overnight. Cut brownies into small pieces and serve. Enjoy!

INGREDIENTS:
1 cup white sugar
1/2 cup butter, softened
4 eggs
1 1/2 cups chocolate syrup
1 cup all-purpose flour
2 cups confectioners' sugar
1/2 cup butter, softened
2 tablespoons creme de menthe liqueur
6 tablespoons butter
1 cup semisweet chocolate chips
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
In a large bowl, cream together 1 cup sugar and 1/2 cup of softened butter until smooth. Beat in eggs one at a time, then stir in the chocolate syrup. Stir in the flour until just blended. Spread the batter evenly into the prepared pan.
Bake for 25 to 30 minutes in the preheated oven, or until top springs back when lightly touched. Cool completely in the pan.
In a small bowl, beat the confectioners' sugar, 1/2 cup butter or margarine and creme de menthe until smooth. Spread evenly over the cooled brownies, then chill until set.
In a small bowl over simmering water, or in the microwave, melt the remaining 6 tablespoons of butter and the chocolate chips, stirring occasionally until smooth. Allow to cool slightly, then spread over the top of the mint layer. Cover, and chill for at least 1 hour before cutting into squares.

How to Make the Perfect Chocolate Mint Brownies!
These chocolate mint brownies are sooo good! I was worried the peppermint would overwhelm the entire brownie, but it didn't. Thankfully! This is a pretty delicious brownie all on it's own too. If you're not a big mint flavor person, you can totally leave out the mint frosting step and stick with just the brownie and the chocolate ganache. You don't have to keep the mint to have a great tasting brownie! If you're interested in making this, I will leave a link down below.

Ingredients:
Brownie Batter:
1 cup butter, softened
2 cups sugar
1/2 tsp vanilla extract
4 eggs
2/3 cup cocoa powder
1/2 tsp baking powder
1/2 tsp salt
1 1/2 cups flour (use 1/4 less if you live in a low altitude area)
Mint Buttercream:
1/2 cup butter, softened
2 1/2 cups powdered sugar
2 1/2 tsp half and half
1 tsp peppermint extract
3 drops of green gel food coloring
Chocolate Ganache:
1 1/2 cups chocolate chips
1/2 cup butter, melted
Directions:
Make the brownie batter: To a bowl, cream together the butter and sugar. Add in the vanilla extract and beat in 1 egg and a time, mixing well between each addition. Once everything is nice and mixed, add in all of the dry ingredients. Mix until combined.
To a 9X13 baking dish, spray with non-stick cooking spray and apply a sheet of parchment paper, leaving some hangover for easy removal. Evenly spread out the brownie batter. Into a preheated oven at 350 degrees for 30-35 minutes. Let the brownies completely cool (about 2 hours) before adding on the mint frosting. Warm brownies will melt the frosting.
Make the mint buttercream frosting: To a bowl, add in the butter, powdered sugar, half and half, peppermint extract and gel food coloring. Mix until combined. Spread the frosting over the completely cooled brownies.
Make the chocolate ganache: To make the chocolate topping, melt the butter and chocolate chips in a microwave safe bowl. Let the chocolate cool for just a minute before pouring onto the mint layer. I found it was easier to tilt the entire dish, letting gravity move the chocolate around coating the entire top.
Let the chocolate set for 1 hour before slicing. Enjoy!
