How To make Greek Feta Bread
1/2 Cup Lukewarm Water
2 Tablespoons Dry Yeast
1/4 Cup Honey
3 1/2 Cups Whole Wheat Or All Purpose Flour
or as needed
1 Teaspoon Olive Oil
1/4 Pound Feta Cheese
2 Eggs
1 Egg White :
beaten
1 Teaspoon Poppy Seeds
In large mixing bowl, combine water, yeast and honey. Let sit in warm place until mixture foams.
Stir in 1 1/2 to 2 cups flour, or as needed to create thick batter, mixing well with wooden spoon. Let batter rise in warm place for 30 minutes.
Stir in oil and enough flour to form kneadable dough. Turn onto lightly floured surface and knead for 5 to 8 min., or until dough becomes elastic and less sticky. Place in clean, lightly oiled bowl. Let dough rise in warm place for 1 hr. Punch down, and let rise again for 30 min. Lightly oil large baking sheet.
On floured surface, roll dough into large rectangle. Crumble the feta cheese into middle, then break eggs onto cheese. Quickly fold up sides of dough, completely enclosing feta and eggs, and pinching edges to seal.
Place loaf on baking sheet, and brush with beaten egg white. Top with poppy seeds. Let loaf rise for 20 min. Bane at 350

Cheesy Feta Filled Flatbread

Ingredients
The Bread Dough:
2 cups lukewarm water
2 teaspoons granulated sugar
1 and 1/2 teaspoons instant active yeast
1/4 cup flour
4 cups all-purpose flour
1 and 1/2 teaspoons salt
1/4 cup olive oil
The Cheese Filling:
8 oz (350g) feta cheese, crumbled
8 oz (200g) shredded mozzarella cheese
8 oz (230g) cream cheese, softened
1 teaspoon dried mint
1 teaspoon dried crushed oregano
freshly cracked black pepper, to taste
For the Topping:
Fine semolina flour for the trays (optional)
melted butter
sesame seeds
Instructions
Make the Dough:
In the b owl of a tabletop mixer that has been fitted with the dough hook attachment add the water, sugar, yeast and the quarter cup of flour. Whisk together and let it sit for 8 minutes so that the yeast activates. The yeast is active when a puffy cloud forms at the top of the mixture.
Combine the flour with the salt in a large bowl and whisk together. Add it to the yeast mixture along with the olive oil.
Knead at low speed for 10 minutes.
Grease a large bowl with olive oil and toss the dough in the bowl. Cover with plastic wrap and set aside to rise until doubled in volume.
Make the Cheese Filling:
Combine all of the filling ingredients together in a bowl and mix until they're all incorporated. Set aside.
Preheat the oven to 400 °F, 200 °C.
Transfer the dough to a clean work surface and divide it into 8 or 16 equal portions.
Press each portion into a flat circle and divide the filling equally between all of the dough portions.
Fold the edges of dough over the filling and press it into a disc.
Place all of the filled portions of dough onto baking trays lined with parchment paper and sprinkled with semolina.
Set aside to rest for 20 minutes.
Brush the top of each disc with melted butter and sprinkle some sesame seeds on top.
Bake for 15 minutes on the center rack of the preheated oven. Move the tray to the top rack and bake an additional 8 minutes or until golden.

Notes
Freezer Instructions: Assemble the flatbreads and bake them. Allow them to cool completely and then transfer into freezer-safe bags. They will keep fresh in the freezer up to a month. Toast them before serving.

It's an easy recipe for a traditional homemade Greek tiganopsomo filled with the flavors of feta cheese, olive oil, oregano and thyme. Kali Oreksi!
The ingredients:
For 4 medium size fried breads (tiganopsoma)
- 250g / 9oz (1 cup) all-purpose flour
- 250g / 9oz (1 cup), feta cheese, crumbled
- 30ml (2 tbsp) extra virgin olive oil*
- 1 tsp dry yeast
- 1 tsp dry oregano
- 1 tsp dry thyme
- 1/2 tsp white wine vinegar
- a pinch of salt
- 125ml (1/2 cup) warm water
- 250ml (1 cup) olive oil for frying*
*You can use vegetable oil instead (in both the dough and the frying), but we strongly believe that the olive oil will make the tiganopsomo taste so much better due to its rich flavor.

Bouyourdi: Greek Cheesy Baked Feta Dip
Bouyourdi is a Greek-Style Cheesy feta dip that is a perfect appetizer for your Holiday table.

Serves 6-8:
1-pound feta cheese, crumbled
8 ounces (226 grams) gouda cheese, shredded
1-2 Roma tomatoes, thinly sliced
2 roasted red peppers, from the jar, drained and cubed
2 pepperoncini
Pinch of crushed red pepper flakes
¼ cup olive oil
1-2 teaspoons dried oregano
Pita chips, bread, or sliced vegetables for serving
Preheat the oven to 400 °F, 200 °C.
Drizzle 2 tablespoons of olive oil in the bottom of an 8 by 8-inch baking dish and spread half of the tomato slices in the dish.
Top with the crumbled feta cheese and sprinkle half of the oregano on top.
Sprinkle half of the gouda cheese on top then add the chopped roasted red peppers.
Top with gouda cheese. Place the 2 pepperoncini on top and sprinkle the remaining oregano and red pepper flakes.
Cover with foil and bake in the center of the preheated oven for 20 minutes.
Uncover and turn the broiler element on and cook for 3-5 minutes or until golden. Keep a close eye on it so that it doesn’t burn.
Serve with pita chips, toasted bread, or some vegetables. Enjoy!

Ingredients ...
*Cooking Spray* and a Baking Tray of your choice.
Dough
1 3/4 c Bread Flour
1/2 c All Purpose Flour/+ 1/2 c or little more for kneading and dusting
2 tsp. Active Dry Yeast / instant
1 1/4 c warm Water / 90*F
1 1/2 Tbs. Sugar
1/2 tsp. Pink Salt / or regular salt
2 1/2 tsp. Sunflowers / the shells off and use half of it in the dough
2 tsp or more Roasted Sesame Seeds / use half of it in the dough
1 Tbs. Roasted Onion Flakes / or just Onion Flakes - use half of it in the dough
1/2 Tbsp Caraway seeds / use only half of it in the dough
The rest of the seeds will be used for topping.
Greenery
1/2 bunch Italian Parsley / diced
1/2 bunch Dill Weed / diced
3/4 c fresh Basil / or more if you like ,only the leaves
6 cloves of Garlic
OLIVE PASTE
1 c Kalamata Greek Olives/ seeds removed
5 to 6 cloves of Garlic
1 tsp. dry Oregano
3 to 4 heaping Tablespoons of grated Parmesan Cheese
1 to 2 Tbs. of Sunflower seeds / shells removed + save almost 1 Tbs. for topping
1 - ( 7 oz. ) Guacamole
1/4 c to 1/2 c E.V.O.O. - Extra Virgin Olive OIL / START OFF WITH THE 1/4 CUP THEN ADD GRADUALLY MORE IF YOU LIKE UP TO 1/2 CUPS AND NO MORE.
Pinch of Salt / as much as you like
EXTRAS
3/4 c to 1 c of Greek Feta Cheese / more if you like
Topping...
Roasted Onion Flakes
Sunflower seeds
Caraway seeds
1 egg / beaten
