How To make Lumpia (Close Kin To Chi.Egg Rools)
4 Oriental dried mushrooms
3/4 lb Lean ground pork
1 md Size onion, chopped
3 Cloves garlic, minced or
-pressed 1/3 lb Med. size raw shrimp,
-shelled, deveined, chopped 1/3 c Water chestnuts, chopped
1 tb Soy sauce
1 Egg lightly beaten
Salad oil Lumpia Sweet & sour sauce -recipe follows 12 Lumpia wrappers (recipe)
- or egg roll skins(thicker -than monemade lumpia, so -not as delicate a crust -after frying) Prepare sweet and sour sauce; set aside. Also prepare lumpia wrappers and set aside. Soak mushrooms in warm water to cover for 30 min., then drain. Cut off and discard stems; finely chop caps. Crumble porc into a wide frying pan. Add onions and garlic and cook over med. high heat, stirring, until meat is browned (about 6 min.) Add shrimp, mushrooms, and water chestnuts and cook for 2 min. Stir in soy. Let cool; then discard excess pan juices. Fill and fold lumpia ,start from a corner Diamond wise, then roll up bringing the sides in, moistening wrapper edges with egg to seal. ( at this point you may cover and refrigerate for up to 8 hours.) Into a 2 to 3 quarts pan, pour oil to a dept of 1-1/2in and heat to 340deg. on a deep frying thermometer. (If using egg rolls, heat to
360deg.) Add 4 or 5 lumpia; cook, turning as needed, until golden
brown (2-3 min). Remove with a slotted spoon and drain on paper towels; keep warm in a 200deg. oven. Repeat with remaining lumpia. Serve with sweet & sour sauce.

Oil For Frying - 20
OVERHEAD COST : 20 (gas,tranpos,etc)
TOTAL COST : 120
YIELDS : 39 pcs
120 (total cost) ÷ 39 (yields)3.7 cost per piece
SRP : 6-7 pesos each
39 (yields) × 6 (SRP) = 234
234 - 120 (gastos) =114 (potential profit)

Lumpiang Shanghai is a staple in Pinoy celebrations! But with this recipe, you can easily cook it whenever you crave it! Don’t forget your to serve with your favorite sawsawan!
Serves 7 to 8.
INGREDIENTS:
Set A:
1/2 kilogram ground pork (with at least 20% fat for a juicier spring roll)
2 tablespoons oyster Sauce
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 cloves garlic, minced
1 piece onion, minced
2 eggs
1/4 cup flour
1 piece carrot, grated
A handful of kinchay or spring onions, chopped
Set B:
24-30 pieces medium lumpia wrappers
4 tablespoons flour
1/4 cup water
Set C:
3-4 cups cooking oil, for frying

Teochew Five Spices Meat Roll is popular in the Southeast coastal cities in China and some Southeast Asian countries. These rolls look like sausages. You can also think of them as egg rolls but gluten-free because the wrapper is made with tofu skin - super crispy. With the juicy and flavorful filling, these rolls are beyond delicious.
????PRINTABLE RECIPE -
INGREDIENTS
2-3 sheets of tofu skin, cut into 6*9 inches size
1 lb (450 grams) of pork shoulder
1/2 lb (226 grams) of Jicama, peeled and diced
4 scallions, use the white part, diced
1 Egg
2 tbsp of minced garlic
1 tbsp of minced ginger
1/2 tbsp of fish powder
1 tsp of 5 spice powder (Amazon Link -

1/4 cup of sweet potato starch, can be replaced by tapioca starch (Amazon Link -

INSTRUCTIONS
Cut the big tofu skin into 6*9 inches sheets and set it aside.
Cut the pork into bite-size pieces, then roughly blend in a food processor. Five-spice roll is traditionally made with pork belly, but I think that is too fatty, and I recommend using pork shoulder. If you don’t have a food processor, you can use store-bought ground pork; the texture will slightly differ, but the taste will still be delicious.
Transfer the pork into a big mixing bowl. Then add egg, minced garlic, ginger, soy sauce, fish sauce, salt, five-spice powder, fish powder, and sweet potato starch. Stir within one direction for a few minutes until the meat becomes sticky.
Combine the meat with the diced Jicama and white parts of the scallion thoroughly.
Put some filling on the tofu skin and shape the filling into a long log. Next, roll up the tofu skin to wrap the meat. Slightly dap some water on the rest of the sheet to seal the five-spice roll. Do this to all the five-spice rolls.
Let the rolls rest for 10 minutes or until the tofu skin becomes soft. Then, pinch both ends of the roll so the filling is not exposed.
Heat the oil to 320 F. deep fry the five-spice roll over low heat for 8-10 minutes. You can pan-fry or shallow fry them if you want to use less oil. Do not fry them on high heat because the tofu skin burns quickly.
Serve it as an appetizer or a side dish. You can also top it on noodle soup and congee.
