Greek Lentil Soup
* 1 large onion, diced
* 3 garlic cloves, chopped
* 10 ounces spinach, chopped (frozen OK)
* 2 large potatoes, diced
* 1 dried or fresh pepper
* 1/2 lbs green lentils
* 2 teaspoons of coriander seeds
* 2 teaspoons of dried oregano
* 3 bay leaves
* 1/3 cup lemon juice
* Thin sliced lemons to garnish
* Olive oil for pan and to garnish
* Pepper to taste
* Salt to taste
Cook onion in oil. Add garlic. Add spinach and potatoes and lentils. Cover with stock or water, add herbs and spices and pepper, and boil at a hard boil for 5 minutes. Turn down heat and add more liquid if necessary. Simmer for 10-20 minutes. When lentils are cooked add lemon juice and salt and pepper to taste.
Quick Biscuits
* 3 cups AP flour
* 1 teaspoon salt
* 4 teaspoon baking powder (in the show I had some acid in there so I used 1 tsp baking powder and 1 tsp baking soda, but if you don't have acid in there just use 4 tsp baking powder)
* 1 stick of butter (I used a vegan substitute at a 1:1 ratio in this show)
* 1 cup Milk (I used almond milk and oat milk in the clip. You might not need this much milk, sorry I didn't measure!!!)
Set oven at 450°F. Mix dry ingredients. Cut butter into flour mixture until consistency similar to corn meal. Add liquid. Mix until incorporated.
Use a spoon or roll out and cut biscuits. Bake in oven until golden brown (8-12 minutes). Be sure not to overcook.

سأشارككم وصفة تركية لذيذة وصحية شوربة العدس الأحمر. هذه الوصفة مليئة بالنكهات والمغذيات وهي مثالية لإفطار رمضان أو وجبة سريعة وسهلة.
مكونات:
كوبان من العدس الأحمر (400 جرام).
ماء للنقع
بصلة واحدة (150 جرام).
جزرة واحدة (60 جرام)
حبة بطاطس (180 جرام).
فصين من الثوم (17 جرام).
حبتان من الطماطم متوسطة الحجم (180 جرام).
ملعقتان كبيرتان زيت زيتون
ملعقة كبيرة نعناع مجفف
ملعقة صغيرة بابريكا
نصف ملعقة صغيرة فلفل أسود
نصف ملعقة صغيرة كركم
مرق الخضار (15 جرام؟
ملح للتذوق
8 أكواب ماء ساخن
ملعقتان كبيرتان من الزبدة (30 جرام).
تعليمات خطوه بخطوه:
نبدأ بغسل العدس الأحمر بالماء البارد حتى يصبح الماء صافياً. ثم ينقع العدس في الماء لمدة 30 دقيقة.
أثناء نقع العدس ، حضر الخضار. يقشر البصل والجزر والبطاطا ويقطع إلى قطع صغيرة. قشر و قطع الثوم.
في قدر كبير ، سخني ملعقتين كبيرتين من زيت الزيتون على نار متوسطة. يُضاف البصل المفروم ويُطهى حتى يتكرمل ويصبح لونه بنياً ذهبياً.
نضيف الجزر المفروم والبطاطا والثوم المهروس في القدر ونطهو لمدة 5 دقائق مع التحريك من حين لآخر.
قطعي الطماطم إلى مكعبات وأضيفيها إلى القدر مع النعناع المجفف والفلفل الحلو والفلفل الأسود والكركم ومرق الخضار. يتبل بالملح حسب الرغبة ويطهى حتى تنضج الطماطم.
صفي العدس المنقوع وأضيفيه إلى القدر مع 8 أكواب من الماء الساخن. اتركي الشوربه تغلي ، ثم خففي النار إلى درجة متوسطة منخفضة واتركيها تنضج لمدة 40 دقيقة أو حتى ينضج العدس.
بمجرد أن ينضج العدس ، استخدمي الخلاط الغاطس أو انقل الشوربه إلى الخلاط واخلطيها حتى يصبح ناعمًا.
في مقلاة صغيرة ، ذوبي ملعقتين كبيرتين من الزبدة مع القليل من زيت الزيتون وملعقة صغيرة من البابريكا.
ضعي الشوربة في أوعية ورشي عليها الزبدة المذابة وخليط البابريكا.
قدميها ساخنة واستمتعي بشوربة العدس الأحمر التركية اللذيذة والصحية!
I'm going to share with you a delicious and healthy Turkish recipe for red lentil soup. This recipe is packed with flavor and nutrients and is perfect for Ramadan iftar or a quick and easy meal.
Ingredients:
Two cups of red lentils (400 grams)
Water for soaking
One onion (150 grams)
One carrot (60 grams)
One potato (180 grams)
Two cloves of garlic (17 grams)
Two medium-sized tomatoes (180 grams)
Two tbsp of olive oil
One tbsp of dried mint
One tsp of paprika
Half a tsp of black pepper
Half a tsp of turmeric
Vegetable bouillon (15 grams?
Salt to taste
8 cups of hot water
Two tbsp of butter (30 grams)
Step by step Instructions:
Start by washing the red lentils in cold water until the water runs clear. Then, soak the lentils in water for 30 minutes.
While the lentils are soaking, prepare the vegetables. Peel and chop the onion, carrot, and potato into small pieces. Peel and crush the garlic.
In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and cook until it becomes caramelized and golden brown.
Add the chopped carrot, potato, and crushed garlic to the pot and cook for 5 minutes, stirring occasionally.
Dice the tomatoes and add them to the pot along with the dried mint, paprika, black pepper, turmeric, and vegetable bouillon. Season with salt to taste and cook until the tomatoes have softened.
Drain the soaked lentils and add them to the pot along with 8 cups of hot water. Bring the soup to a boil, then reduce the heat to medium-low and let it simmer for 40 minutes or until the lentils are tender.
Once the lentils are cooked, use an immersion blender or transfer the soup to a blender and blend until smooth.
In a small pan, melt 2 tablespoons of butter with a drizzle of olive oil and 1 teaspoon of paprika.
Ladle the soup into bowls and drizzle with the melted butter and paprika mixture.
Serve hot and enjoy your delicious and healthy Turkish red lentil soup!

Today I want to share with you, our number one soup; lentil soup. ???? I have never met anyone who doesn’t like this soup. It was one of the five dishes I loved when I was a child. It is very easy to make, cheap, nutritious and keeps you happy and warm for along time. Plus, with small tricks you can turn this soup into a fulfilling main course with low calories!

Cooking time: 15-20 minutes
2 cups red lentils
8 cups water
1 large onion, roughly chopped
2 tablespoons butter
2 tablespoons flour
1 cup chicken stock
1 heaped teaspoon salt
• Rinse the lentils for about two minutes under cold running water to remove any excess dirt and starch.
• Place the lentils and onion in a medium sized pot and fill with the water.
• Boil for 10-15 minutes until it becomes a thick puree.
• Collect the white foam forming on top while boiling. This foam gives the soup a greyish color and makes it harder to digest.
• To make the meyane (roux), melt the butter in a pan and add the flour.
• Cook for a couple of minutes until it smells like roasted nuts and becomes light brown.
• Pour in the chicken stock into the pan and whisk constantly.
• Add the mixture to the soup and season with the salt.
• Lastly, blend the soup with an immersion blender till the texture becomes creamy and smooth.
Your velvety lentil soup is ready and it is such a good base that you can top with many things and turn the soup into an incredible meal. For the classical one, top with red pepper flakes and squeeze some lemon. In Cyprus, it is really common -and delicious- to add black olives to soup and adding croutons is always a good idea. You can always sprinkle some roasted kadayif instead of croutons. If you want your soup as a main coarse, top with some meatballs, red beans and coriander. Homemade Lentil Soup Recipe
This delicious Lentil soup recipe is jam-packed with spices and caramelized vegetables to bring about an incredibly flavorful soup. This is one of the easiest-to-make most nutritious soups on my website and the taste is beyond amazing.
Lentils are a legume that is indigenous to the Mediterranean and Middle Eastern Countries. They are seeds of a plant that are jam packed with fiber, potassium and protein and make for a great meat replacement.
Since lentils are starchy, earthy in flavor, and can be on the bland side, there are many ways to make them flavorful including by adding them into soup. When other ingredients are introduced that compliment lentils like onions, garlic, spices, and lemon, the taste is out of this world.
There are many variations of lentil soup depending on where you live so do not be surprised if you see different ingredients in it. My version is much more of a Middle Eastern Lebanese style.

Ingredients for this recipe:
• 2 tablespoons olive oil, ghee, or clarified butter
• 2 peeled and medium diced yellow onions
• 2 peeled and medium diced carrots
• 2 peeled and medium diced ribs of celery
• 3 finely minced cloves of garlic
• 1 ½ teaspoons ground cumin
• 1 teaspoon ground coriander
• 3 cups green lentils, rinsed
• 1 large peeled and medium diced potato
• 2 bay leaves
• 9 cups chicken stock
• juice of 1 lemon
• salt and pepper to taste
Persian Adas Polo (Lentil rice with raisins & meat or mushrooms) - بهترین عدس پلوی ایرانی
Adas Polo (عدس پلو) is a popular Persian (Iranian) rice dish made using the Polo/Polow technique. Rice is par-cooked (boiled and strained to wash the starch out of it). Then prepared lentil and ground meat are mixed with par-boiled rice and steamed to perfection, yielding an extremely delicious Persian classic. You can easily replace the meat with your favorite mushrooms to make it a vegetarian dish! This dish can be made with almost any kind of meat (usually ground and sautéd ahead of time) or it can be made with mushrooms instead of meat. Adas Polo can be served as a side dish (when made with no meat) or can be the main attraction. I like to make my Adas Polo with 80/20 ground beef and serve it with a Shirazi Salad. You can customize this recipe in many ways; add additional or alternate dried sweet fruits and nuts.
