How To make Almond Pastry Fingers
Dough: 5 1/2 cups flour
1/2 cup vegetable shortening
2 1/2 cups chopped almonds
1 teaspoon cinnamon
Filling: 1/4 teaspoon ground cloves
vegetable oil for frying 1/2 teaspoon salt
1 cup water
Syrup: 5 cups sugar
3 cups water
Cut shortening into flour; add salt and water to consistency of soft dough. Roll dough very thin; cut into strips about 4 inches by 3 inches. Place on each strip 1/2 to 1 teaspoon filling. Roll lengthwise to make finger strips. Use fork to seal finger strips. Fry in vegetable oil and drain on absorbent paper. Dip in cool syrup while hot. Do not cover, so they will stay crisp.
Thaktila can be frozen uncooked or cooked, as needed. Leftover syrup does not spoil and may be kept in refrigerator in airtight jar. Makes 100-120 pieces.

ALMOND PUFF
Bottom Layer:
1/2 cup butter
1 cup flour
2 Tbsp water
Mix until forms a ball. Divide into 2 balls. Flatten into a 12x3 strip on a greased cookie sheet.
Middle Layer:
1/2 cup butter
1 cup water
1 cup flour
3 eggs
1 1/2 tsp almond extract
In a pan, bring butter and water to a boil. Remove from heat. Add flour and stir until it forms a ball. Cool for 5 minutes. Add eggs one at a time, stir vigorously to incorporate each egg. Add extract, mix.
Divide over 2 bottom layers, spread to edges. Bake 350 for 45 min until crisp and golden.
Glaze:
1 1/2 cup icing sugar
2 Tbsp melted margarine
1 tsp almond extract
water to make spreadable
Combine to a nice thick but runny consistency. Spread on top of cooled puffs. Add sliced almonds for garnish. Slice puffs. Freezes well.

1 Pack Roll puff pastry
2 Tbsp Egg white
70g Icing sugar
80g Almond flakes
Methods:
1) Mix the egg white and icing sugar together into paste
2) Brush the egg white paste evenly on the puff pastry.Put the almond flakes on top of the puff pastry, press it
3) Cut into small pieces and place it on lined baking tray
4) Pop in preheated oven at 180C, bake for 15-18 minutes or until golden
