How To make Angel Hair Soup with Chicken& Pine Nuts
2 Chicken breast halves
-skinned and boned About 1/2 lb total 3 oz Fresh angel hair pasta
2 tb Italian parsley
2 cn (14 1/2 oz ea) chicken broth
2 tb Pine nuts
1. Cut the chicken into thin strips, 1/4x1-inch. Cut
the pasta into 1-inch pieces. Mince the parsley and set aside. 2. Bring the chicken broth to a boil in a covered
medium saucepan over high heat. Add the chicken and reduce the heat to medium-high. Cook. stirring occasionally, until the chicken is almost cooked through, about 1 min. Add the angel hair pasta and cook until tender but still firm, 2 min longer. 3. Meanwhile, place the pine nuts in a small, dry
frying pan over medium heat. Cook, stirring occasionally, until golden brown, about 3 min. 4. To serve, spoon the soup into bowls and garnish

I've got an incredible pasta recipe for you....Spaghetti Pesto with Chicken. I love the vibrant colors, and the great flavors in this simple pasta recipe. The pesto sauce itself takes about 15 minutes to make (you can also freeze it an defrost in no time), and has a wonderful fresh, savory flavor. I'm also always looking for chicken recipes, and this is a great way to taken some otherwise boring chicken breasts and really jazz them up. While I use spaghetti for this recipe, you can easily use just about any pasta you like. And you can also easily swap out the chicken for shrimp or scallops. However you do this, you'll love this simple spaghetti pesto.

Easy to make chicken pasta recipe!
Ingredients:
Honey (2 Tablespoons) OR Brown Sugar (2 Tablespoons)
Orange (1 Large one Squeezed)
Saffron (1/2 Teaspoon)
Chicken Breasts (3)
Pasta (1 Box of Angel Hair)
Onion (1 Cut in Half Moon)
Mushrooms (1 Cup Diced)
Cherry Tomatoes (1 Cup cut in half)
Parsley (1 Bunch Chopped)
Scallions (1 Bunch)
Pine Nuts (1 Cup)
Artichoke Hearts (half cup)
Olive Oil
Salt and Pepper (To Taste)
Directions :
1. In a small non stick pan, add the honey, orange and saffron.
2. Cook on medium/ low heat for about 10 minutes.
3. Take 3 pieces of chicken breast and put salt and pepper on both sides.
4. Grill the chicken breast, depending on the thickness of the chicken, grill for about 10 minutes total flipping a couple of times. Then set it aside.
5. Cook angel hair pasta and add olive oil and set it aside.
6. In a medium non stick pan add two tablespoons of olive oil. When the heat is hot enough, add onions, mushrooms, cherry tomatoes, parsley, scallions, pine nuts and artichoke hearts. Cook on medium heat for about 7 minutes. At the end, add salt and pepper.
7. Combine everything together. The pasta, the mix and the chicken.

Pesto Romano Chicken Bake with Michael's Home Cooking
A delicious and quick recipe from a friend, Jeanie. I work with Jeanie and she told me that she loves this Pesto Romano Chicken. I take her recipe and add some jalapeños to it for spice. I hope you give this a try!
I baked this for 40 minutes @ 350F
Be sure to test the temperature of your chicken so that it is 165 degrees and safe to eat.

Linguine with brown butter, prosciutto & pine nuts
I think just about every kid (and adult) on the planet loves to eat pasta with butter and parmesan cheese. This is a fancy version of that classic combination with a couple additional ingredients that add some protein and extra delicious flavor. You can serve this as a super simple main course with a green salad or use it as a side dish -- it pairs really nicely with chicken.
Serves 4-6
1 pound (450 g) linguine
½ c. (120 g) unsalted butter
3 ounces (85 g) prosciutto -- sliced thin & roughly torn into small pieces
½ c. (75 g) toasted pine nuts
½ c. (20 g) chopped parsley
2 T. (30 mL) lemon juice
freshly grated parmesan
Cook linguine in boiling, salted water until al dente. Drain.
While pasta is cooking, cut butter in chunks and heat in a heavy skillet over medium heat. Swirl the pan so that the butter doesn't burn. Remove from heat immediately when foaming subsides, butter turns light, golden brown and gives off a nutty aroma. Careful -- brown can turn to black in an instant so pay close attention!
Stir in pine nuts, prosciutto and parsley. Toss with linguine and freshly grated parmesan.
