In this episode of In The Kitchen With Matt, I will show you how to make an apple streusel coffee cake also commonly called an apple crumble coffee cake. This recipe for easy apple coffee cake with a yummy streusel or crumb topping is so yummy! Although there is no actual coffee in the cake, it is commonly called coffee cake because people over the years have enjoyed a slice with a cup of coffee. I don't drink coffee, but enjoy mine with milk. If you want a normal coffee cake, you can leave the apples out and don't put the crumble or streusel on the top. Either way, this cake recipe is super easy to make, if I can do it, you can do it. Let's get baking!

Ingredients:
1 large egg
1/2 cup buttermilk or use normal milk (120ml)
1/2 cup white granulated sugar (100g)
1/4 cup butter or oil (57g)
1 1/2 cups cake flour or all-purpose/plain flour (180g)
1/4 tsp. baking soda (1g) leave it out if using normal milk
1 tsp. baking powder (5g) double it if using normal milk
1/2 tsp. salt
1/2 tsp. cinnamon (1g)
3 medium apples or 2 large apples (granny smith, fuji, gala, etc.)
Streusel/Crumble Topping
3 Tbsp. butter, softened (45g)
1/2 cup white granulated sugar (100g)
1/3 cup of all-purpose/plain flour (40g)
1 tsp. cinnamon (2g)

Ingredients:
To Make streusel topping and centre.
1 1/2 cups all-purpose flour
1 cup brown sugar
1 1/4 teaspoons ground cinnamon
1 tsp salt
175 gms cold unsalted butter, cut into small pieces
1 1/2 cups chopped toasted walnuts
To Make The Cake
2 cups all purpose flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup caster sugar
115 gms unsalted butter, softened
2 large eggs or 3 small ones
1 1/2 tsp vanilla essence
1 cup sour cream (Check my video on how to make your own homemade sourcream)
5 tbsp milk
1) To Make streusel topping
Mix together flour, 1/2 cup brown sugar, 1 teaspoon cinnamon, and 1 teaspoon salt.
Cut in butter using a pastry cutter or rub in with your fingers until small to medium pieces form.
Mix in 1/2 cup of chopped walnuts. Refrigerate until ready to use.
2) To Make the streusel center:
Mix together remaining 1/2 cup brown sugar, 1/4 teaspoon cinnamon, and 1 cup walnuts. Set aside.
3) Preheat oven to 180 degrees C and Butter a 9-inch cake tin.
4) To Make the cake:
Sift the flour, baking powder, baking soda, and 1/2 teaspoon salt into a large bowl.
5) Beat butter and caster sugar until pale and light. Beat in eggs, one at a time and beat till creamy, then add vanilla essence. Gradually add in flour mixture, alternating with sour cream, beginning and ending with flour.
Continue to beat until well combined.
Add 2 tbsp milk.
6) Transfer half the cake batter into the pan. Sprinkle streusel center mixture evenly over batter.
Top with remaining cake batter, and spread evenly. Sprinkle streusel topping evenly over batter.
(If there is excess topping, you can save this for later use for another cake like a vanilla or a coffee cake)
7) Bake until cake is golden brown about 55 to 60 minutes depending on the heat in your oven.
8) Transfer pan to a wire rack, and let it cool for approximately 25 to 30 minutes. This cake is best had when it’s slightly warm.

This easy coffee cake recipe constitutes an incredibly moist and fluffy yet tender crumb. It’s loaded with chopped walnuts and cinnamon topping that gives it a delicious crunch with each bite. A dessert that’s perfect to brighten up one’s mid-day coffee break.
You’ll need:
CAKE:
• 2 cups flour (spooned & leveled) *please notes below
• 1 tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• 1 cup unsalted butter (room temperature)
• 1 cup white sugar
• 2 large eggs (room temperature)
• 1 ½ tsp vanilla extract
• 1 cup sour cream (room temperature)
TOPPING:
• 1 ½ cup walnuts (chopped)
• 2/3 cup light brown sugar
• 2 tsp ground cinnamon
*Using 9”x 9” square baking pan
:: HELPFUL HINTS ::
* Measure your flour correctly (spoon & level method). Adding too much flour will result to dry and crumbly texture when baked. Fluff your flour with a spoon, spooned it into your measuring cup, and use the back of the knife to level it off.
* Don’t over bake the cake. Take it out of the oven when the inserted toothpick comes out clean.
* Let the cake cool in the pan for 15-30 minutes. Best served and enjoyed with coffee or tea.

Apple Sour Cream Coffee Cake with Honey Cinnamon Cream Cheese Glaze
Ingredients: Cake
2 cups 1.1 GF flour
4 tsp baking powder
½ tsp baking soda
½ tsp kosher salt
2 eggs
⅔ sugar
1 ½ cups lifeway kefir, plain-sub sour cream
1 cup of butter, room temp
3 tsp vanilla extract
1/4 tsp allspice
Ingredients: Topping/ Center
1 ¼ cup chopped pecans
1 ½ tsp ground cinnamon
½ cup brown sugar
1 cup granny smith apple, peeled and finely diced
How To Make It Step-by-Step Instructions:
Preheat the oven to 350 degrees and spray an 8x8 or 9 round baking
dish-at least 2 sides with nonstick baking spray.
In a mixing bowl add the sugar and butter.
Mix on high for 3 minutes.
Mix in the eggs, plain kefir (sub-sour cream) and vanilla extract.
Scrape down the sides and add the dry ingredients.
Mix until just incorporated.
In a separate bowl add the ingredients for the topping (minus apples) and mix well.
Pour half of the cake mixture in the baking dish, sprinkle half of the topping in the center, sprinkle all the apples on top and add the rest of the cake on top and sprinkle the rest of the topping on.
Bake for 40-50 minutes or until a toothpick comes out clean.
Allow it to cool. Enjoy!
Ingredients: Glaze
1 1/2 cups powdered sugar
1/4 tsp cinnamon
1 tsp milk
1 tbsp honey
2oz cream cheese
Mix all the ingredients together until smooth. If it’s not drizzling
add 1 more tsp of milk until thinner.
