These yummy bakery style apple cinnamon muffins with walnuts are incredibly moist with amazing flavour & aroma! Perfect for breakfast!

INGREDIENTS
▪︎ 105g flour
▪︎ 82g unsalted butter, room temperature
▪︎ 35g castor sugar
▪︎ 25g brown sugar
▪︎ 75 egg, room temperature
▪︎ 1 tsp baking powder
▪︎ 1/4 tsp cinnamon
▪︎ Pinch salt
▪︎ 1 tbsp (13g) honey
▪︎ 40g walnuts, chopped
▪︎ 1 large apple (120g), peeled & diced
INSTRUCTIONS
1. Preheat the oven to 200° C & line a muffin pan with paper liners.
2. In a bowl cream together butter, caster sugar & brown sugar until light & fluffy for 2 to 3 minutes.
3. Add egg. Beat for a minute until well mixed.
4. Sift together flour, salt, baking powder & cinnamon. Mix until just combined.
5. Dump in chopped walnuts, apples & honey. Mix gently with a spatula. Do not overmix.
6. Divide the batter evenly among the prepared muffin cups.
7. Bake at 200° C for 5 minutes, then reduce the temperature to 170° C & bake for additional 15 to 17 minutes.
8. Serve warm or room temperature. Enjoy!

How to make a soft muffin with apples and walnuts.
Ingredients:
1 1/2 Cups All Purpose Flour (210g)
1/2 Cup Quick Cooking Oats (45g)
2 Teaspoons Baking Powder (10g)
1/4 Teaspoon Salt (1.5g)
1 Teaspoon Cinnamon (2g)
1/4 Teaspoon Nutmeg (0.5g)
1/2 Cup Butter, Softened (112g)
3/4 Cup Sugar (144g)
2 Eggs, lightly Beaten
1/2 Cup Sour Cream (120g)
1 Green Apple, Peeled and Chopped
1/2 Cup Walnuts (56g)
Directions:
1. In a bowl, whisk together the flour, oats, baking powder, salt, cinnamon, and nutmeg; set aside. In a mixing bowl, cream the butter and sugar together until light and fluffy. Add the eggs and sour cream and mix just until well combined. Add the flour mixture and stir together to combine. Fold in the apple and walnuts.
2. Line a muffin tin with paper liners. Spoon the batter into each cup. Bake in a preheated oven at 375F for 20 minutes or until an inserted toothpick comes out clean. Let cool completely on a wire rack.

1 cup brown sugar (200g)
1/2 cup butter, melted (113g)
1 egg
1 tsp vanilla
3/4 cup milk (177 ml)
1/2 tbsp lemon juice
2 cups all-purpose flour (240g)
1/2 tbsp cinnamon powder
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 apples, diced
For crumble:
1/2 cup flour (60g)
1/3 cup brown sugar (73g)
1/4 cup butter, cold (57g)
1/2 tsp cinnamon

APPLE CRUMBLE MUFFINS
Ingredients
• 1 1/4 cups all purpose flour
• 1/2 cup white sugar
• 1 1/2 teaspoon baking powder
• 2 teaspoons cinnamon
• 1/2 teaspoon nutmeg
• pinch of salt
• 3/4 cup apples unpeeled and diced
• 1/2 cup milk
• 1 egg
• 1/4 cup vegetable oil
For the crumble topping
• 1/2 cup rolled oats
• 1/4 cup soft unsalted butter
• 1/2 teaspoon cinnamon
• 1/4 cup brown sugar
Instructions
• Preheat your oven to 350 degrees Fahrenheit and prepare a 12-cup muffin tin with paper liners.
• Add the flour, sugar, baking powder, cinnamon, nutmeg and salt to a large bowl and combine with a wire whisk.
• Add the unpeeled diced apples to the flour mixture and toss well to ensure the apples are well coated. This will help them remain distributed throughout the muffin batter when baking and keep them from settling at the bottom of the muffins.
• Whisk the milk, egg and oil together in a small bowl or measuring cup and add the mixture to the dry ingredients.
• Fold the wet and dry ingredients together gently just until no streaks of flour remain.
• Spoon the muffin batter into the muffin cups, dividing the batter between them as evenly as possible.
• Combine the ingredients for the crumble topping together in a small bowl until the mixture resembles coarse crumbs.
• Top each unbaked muffin with a spoonful of crumb topping and bake the muffins at 350 degrees for about 23-25 minutes or until the muffins are golden brown and a toothpick inserted into one of the muffins comes out clean.
• Let the muffins cool in their tins for about 5 minutes before removing them to a wire rack to cool completely.

APPLE CINNAMON MUFFINS
WITH OATMEAL CRUMB TOPPING
Makes 12 muffins
INGREDIENTS:
2 eggs
½ cup (90g) brown sugar
¾ cup (180ml) vegetable oil
2/3 cup (160ml) water
1 ¾ cup (210g) flour
2 tsp (10ml) baking powder
2 tsp (10ml) cinnamon
½ tsp (2.5ml) salt
¾ cup (110g) apples, diced
1/3 cup (50g) currants or raisins
1/3 cup (50g) walnuts, chopped
Crumb Topping:
4 tbsp. (30g) flour
3 tbsp. (25g) old fashioned oatmeal
1 tbsp. (12g) brown sugar
¼ tsp (1.25ml) cinnamon
½ tsp (2.5ml) baking powder
3 tbsp. (45ml) butter, melted
½ tsp (2.5ml) vanilla extract
METHOD:
Preheat oven to 375F (190C). Line a 12-cup muffin tin with muffin papers or spray with baking spray.
In a large bowl combine eggs, brown sugar, vegetable oil and water. Whisk to combine. Set aside.
In a medium size bowl whisk together flour, baking powder, cinnamon and salt.
Add the dry ingredients to the wet ingredients, in thirds, until combined. Do not over mix.
Fold in the apples, currants and walnuts. Set aside.
In a smaller bowl make the crumb topping. Combine the dry ingredients and whisk together. Then add the melted butter and the vanilla. Whisk together with a fork until a dry crumble is formed.
Scoop muffin batter into muffin tin with an ice cream scooper, filling ¾ of the way full. Top with 1 tsp of the crumble.
Bake for 20-25 mins until golden brown.
