Apricot Coconut Balls | Exclusively Food Recipe
These soft apricot and coconut balls contain crushed peanuts, chunks of fluffy marshmallow, and finely chopped white chocolate. They are no-bake and easy to make, perfect for making with kids. For optimum flavour, we remove the apricot balls from the fridge about 15 minutes before serving.

For accuracy, we use digital scales to weigh all ingredients. Volume measurements are given in Australian Standard cups (250ml) and spoons (20ml tablespoon, 5ml teaspoon).
1. Grind the almonds in a bowl of a kitchen processor (not long so as not to turn them into a paste). Add dried apricots and rolled-oats, chop. 2. Form the mixture into balls. Roll them in shredded coconut.

INSTRUCTIONS: 1. Put apricots in a food processor and pulse until finely chopped. You can also chop them finely with a knife. 2. Add walnuts, 1/4 cup shredded coconut, lemon zest, and maple syrup. Process until it forms a cohesive mixture. 3. Shape the mixture into 1-inch balls and coat them with remaining shredded coconut. 4.
