How To make Arthur Treacher Style Fish
3 Pounds Fish Fillets; Firm, White
2 Tablespoons Lemon juice
1 Cup Milk -- or more as needed
2 Cups Flour
3 Cups Pancake mix
2 Cups Club Soda (approx.)
1 Teaspoon Basil
1 Teaspoon Pepper
1/2 Teaspoon Garlic salt
Cooking oil
Cut fish fillets in half, making triangular shape. Cover with milk and lemon juice and refrigerate 3-4 hours. Drain off milk. Dip fillets in flour to coat each piece lightly. Let dry on a cookie sheet, making sure pieces do not tough. Add oil to deep fryer or heavy pan to a depth of at least 3 inches. Heat oil to 425~. Combine pancake mix, basil, pepper, garlic salt and enough soda to make a thick batter, about the consistency of buttermilk. Dip floured fillets in batter and add to the hot oil one at a time. Fry 4-5 minutes. Remove filets to cookie sheet, again, not letting them touch and keep warm in a 250~ oven. Deep fry remaining filets, keeping the depth of the oil at least 3 inches. NOTE: Do not heap fish as this creates steam in the oven and makes coating soft.

Ingredients
Pollock Fish - 1 pound of fillets. Slice into 4-ounce slices (about 4-inch to 6-inch pieces) for frying. Or any firm fish that is thawed to room temperature.
3 - 4 cups Vegetable Oil, for deep frying
1 1/2 cups Flour
1 teaspoon Baking Powder
3/4 cup of Beer (12 ounces) or bubbly water.
1 Egg
Salt and Pepper to taste
4 - 6 Russet Potatoes - sliced for French fries.
Tartar Sauce for Fish
1 cup Mayonnaise
1/4 cup Pickle Relish
1 tablespoon Lemon Juice
1/2 teaspoon Horseradish
Malt Vinegar is a traditional accompaniment for Fish and Chips.
Directions for Chips (potato fries)
Heat oil to medium/high (375 degrees). Slice potatoes about finger size. Fry the chips for 2 to 3 minutes in batches if needed (fully submerge fries); they should not be crisp or fully cooked at this point.
Remove the chips to a paper towel-lined platter to drain. Allow the fries to cool for 5 minutes.
The fries are now ready for fry number two. Make sure the oil is hot again, test out one french fry to see that the oil bubbles when a fry is added.
Add half of the fries, leaving some room on top for the fish. The fries should cook for a couple of minutes before you add the battered fish.
Directions for frying Fish
Drain and kitchen towel dry defrosted pollock fish pieces.
In a mixing bowl, combine the flour, baking powder, salt and pepper, a lightly beaten egg, and 99 cent Pabst Blue Ribbon beer (or your favorite beer.)
Whisk to a smooth pancake-like batter.
Dredge one serving of fish pieces into the batter, letting the excess drip off.
Carefully lower the battered fish on top of the frying chips. Fry the fish and chips for 4 to 5 minutes until crispy and brown.
Okay to fry fish separately from chips (fries).
Drain and serve on your recently read local newspaper (the British street food way) or serve on a plate.

Arthur Treacher's Fish and Chips is a fast food seafood restaurant chain. At the peak of its popularity in the late 1970s, it had about 800 stores. As of 2015, following the closure of the sole Virginia location, there are 14 remaining, all but one in New York and Ohio. Most locations have been co-branded with Nathan's Famous. The menu offers fried seafood or chicken, accompanied by chips. Its main competitors are Long John Silver's and Captain D's.
