How To make Baby Potatoes Coated with Almonds
3 lb Baby new potatoes
2 tb Almond oil
2 ea Jalapeno peppers, seeded &
-- minced 2 tb Grated ginger
1/2 c Powdered almonds*
2 tb Cilantro, minced
Salt & pepper Lemon juice Steam potatoes till just tender, about 15 minutes. Set them aside. Combine oil, peppers, ginger, almonds & cilantro in a large bowl. Add potatoes & toss till well coated. Season with salt & pepper & sprinkle with lemon juice. Spear potatoes with cocktail sticks; arrange on a platter. Serve hot, or keep warm in a 250F oven for up to 30 minutes. *To powder almonds, place blanched almonds in a food processor & pulese until they are reduced to a powder.

They pair well with just about any main entrée – beef, chicken, lamb, pork and seafood! It’s my go-to potato recipe for hosting dinners, grilled or roasted meats and everyday meals! This 30-minute potato recipe is always a hit for dinner! Plus, you can season them with your favorite spices and herbs, too!
INGREDIENTS:
2 lbs (910 g) baby potatoes
Salt and black pepper
2 to 3 tbsp (28-43 g) butter, melted
2 to 3 tbsp (30-45 ml) olive oil
1 tbsp fresh thyme
1 tbsp parsley
1 ½ tsp garlic powder
For Topping:
2 tbsp fresh parsley
1 tbsp fresh thyme
½ cup grated parmesan cheese

-1 bag small red potatoes, wash & pat dry, then quartered
-2 tbsp fresh rosemary, finely chopped
-2 tbsp fresh thyme, finely chopped
-Salt
-Black pepper
-Garlic powder
-Paprika
-Olive oil, enough to have a thin coating on potatoes
Bake at 450 degrees for 30 minutes. Store in tightly sealed container in the fridge up to a week!
5 Star Roasted Potatoes ❤️
These perfectly roasted potatoes are crispy on the outside and soft and fluffy on the inside, and they are by far the best out there. I par boil them first for about 12 minutes, then I roast them because they will take less time and because they won’t be dry and tough. I season them with lemon pepper, olive oil and seasoned salt first then I roast them for about 28 minutes flipping once, then I toss them with olive oil, freshly minced garlic and finely chopped rosemary and roast them for the last 2 minutes this way they will be crunchy from the outside and soft and fluffy from the inside. Don’t let anyone tell you the garlic won’t bun if roasted longer, because it will. These are delicious as a side dish anytime of the year, and also perfect when you want to switch from mashed potatoes. I hope you give them a try. ❤️
