VANILLA MUFFIN RECIPE | HOW TO MAKE VANILLA MUFFINS | BASIC VANILLA MUFFINS RECIPE
On this video, I'm gonna show you how to make a simple vanilla muffins. Very easy and very tasty vanilla muffin recipe perfect for morning breakfast paired with coffee.

VANILLA MUFFINS INGREDIENTS:
►1 1/4cup all purpose flour
►1tsp baking powder
►1/4tsp salt
►2eggs
►3/4cup white sugar
►100g room temp butter
►1tbsp vanilla
►1/2 cup milk
VANILLA MUFFIN RECIPE COOKING PROCEDURES:
1. Sift 1 1/4 cup all purpose flour, 1tsp baking powder and 1/4 tsp salt. Mix and set aside.
2. In separate bowl, beat 100g room temperature butter and 3/4 cup white sugar. Beat until the color change to pale yellow.
3. Add 2 eggs, 1 egg at a time.
4. Then add the dry ingredients to the wet ingredients and mix.
5. Gradually add 1/2 cup room temperature milk. Mix thoroughly until the texture become smooth.
6. Add 1tbsp vanilla flavor and mix. Set aside.
7. Prepare the muffin pan with cupcake liner.
8. Pour 1 1/2 tbsp of the batter in each cupcake liner.
9. Then bake (in a preheated oven) for 18-20 minutes at 160°C.
10. After 20 minutes, transfer in a cooling rack and let it cool down.
11. Then its ready to serve.

Basic Muffins Recipe Ingredients:
2pcs large eggs
1tsp vanilla flavor
3/4 cup white sugar
1/2 cup vegetable oil
140ml evaporated milk
1 1/4 cup all purpose flour
1tsp baking powder
1/4 tsp salt
dark chocolate chips
Basic Muffins Recipe Procedure:
In a bowl, beat 2pcs eggs.
Add 1tsp vanilla and 3/4 cup white sugar, then mix.
Add 1/2 cup vegetable oil and 140ml evaporated milk.
Mix well and set aside.
In another bowl, sift 1 1/4 cup all purpose flour, 1tsp baking powder and 1/4 tsp salt.
Then, combine wet and dry ingredients. Mix them well until the texture becomes smooth.
Add 1/2 cup dark chocolate chips. Leave small amount for toppings.
Prepare the muffin pan with 3oz muffin liner.
Scoop 2 tbsp of the batter for each muffin liner.
Top it with the remaining chocolate chips.
Bake in a preheated oven for 20-25minutes at 160°C.
Then remove it from the oven and let it cool down.

MAKES 12 MUFFINS
Ingredients
4 Tablespoons unsalted butter melted 57g
1/4 cup canola oil 60ml (you may substitute vegetable oil)
1 cup sugar 200g
1 large egg room temperature
1 large egg white room temperature
1 1/2 teaspoons vanilla extract
1/2 cup buttermilk 120ml (click link for buttermilk substitute)
1 3/4 cup all-purpose flour 220g
2 teaspoons corn starch cornflour UK
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups of your favorite add-ins: Chocolate chips, frozen fruit, nuts, etc.
Additional sugar for sprinkling optional
Instructions

00:48 Combine the melted butter and canola oil in a large bowl and stir well. Add sugar and stir again to combine.
01:27 Add egg, egg white, and vanilla extract. Mix thoroughly until all ingredients are well-combined, then stir in buttermilk.
01:57 In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt.
02:18 Using a spatula, gently fold the dry ingredients into the wet, taking care not to over-mix. Once the dry ingredients have been about half-way stirred into the wet, stir in add-ins (if using) and continue to fold in to batter until just combined.
03:30 Cover bowl with a dry towel and allow batter to rest for 15-60 minutes*
Preheat oven to 425F (215C) and line a 12-count muffin tin with paper liners.
04:00 Once oven has preheated, portion batter into prepared tin, filling each liner at least 3/4 of the way full.
04:33 If desired, sprinkle tops generously with sugar and transfer muffin tin to preheated oven.
04:50 Bake on 425F (215C) for 8 minutes and then, without opening the oven door, reduce the oven temperature to 350F (175C) and bake another 12 minutes, or until tops are just beginning to turn golden brown.

Notes
*This is optional, it helps give the muffin tops a higher rise but you can put them straight in the oven without waiting even 15 minutes and they'll still taste delicious. Ideally you would let the batter set at least one hour, but I found 15 minutes gives me a decent rise (the muffins in the photographs were allowed 15 minutes) while still not dragging out the process too much.

How to make Easy Basic Muffins Recipe
Ingredients
2 cups all purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
150 g plain yogurt, at room temperature
2 large eggs, at room temperature
1 teaspoon vanilla extract
1/2 cup butter, melted and cooled
2/3 cup milk, at room temperature
Instructions
1.Preheat the oven at 375°F.
2.Grease 12 muffin paper cups and set aside.
3.In a large bowl, whisk together the flour, baking powder, sugar and salt.
4.In a medium bowl, whisk together the eggs, vanilla extract and yogurt until smooth.
5.Gently add the eggs mixture and milk into the flour mixture.
6.Using a whisk to stir all the ingredients until combined well, but do not over mix.
7.Add in the melted butter and whisk everything together until just incorporated.
8.Using an ice cream scoop, scoop the batter into each muffin paper cup.
9.Tap the tray gently 3 times for get rid of the air bubble.
10.Put the muffin tray into the oven and bake for 18 minutes to 20 minutes at 375°F.
11.When the time is up, bring the muffin out of the oven. Allow the muffins to cool for about 10 minutes before serving. ENJOY!

Muffin, so easy to make and if you are creative you can make variations with this simple plain muffin recipe. These are the ingredients that are currently available in my pantry. You can use any that you already have!

Ingredients
All Purpose Flour 300 grams
Baking Powder 1 tsp
Baking Soda 1 tsp
Salt 1/4 tsp
Sugar 170 grams
Eggs 2
Plain Yogurt 160 grams
Unsalted Butter 40 grams
Milk 80 grams
Oil 90 grams
Bake first in 210C pre-heated oven for 5 mins and then lower down the temperature to 170C bake for 15-20 mins.
Chocolate — cocoa powder, couverture chocolate chunks
Oreo — oreo cookies
Matcha — matcha powder, white chocolate chips, sweet cream cheese
Blueberry — fresh blueberries and almond
Strawberry — strawberry jam, sweet cream cheese, strawberry biscuits, sweet cream cheese
Carrot — grated carrot, walnut, nutmeg powder, cinnamon powder, sweet cream cheese

Sweet and Soft Basic Muffins Recipe
In this video I'm going to show you how to make sweet and soft basic muffins. The muffin recipe is very easy to make and it's very tasty. If you like eating muffins, maybe you'll like my easy muffin recipe today.
Ingredients
90 g unsalted butter at room temperature
2 eggs at room temperature
90 g sugar
120 g cake flour
3 g baking powder
Instructions
1.Use a whisk to beat the butter until smooth.
2.Add granulated sugar, beat the butter and sugar together.
3.Add the eggs little by little until all the eggs are gone.
4.Mix the flour and baking powder together.
5.Add half of the flour mixture at a time to the butter mixture.
6.Mix the flour and butter mixture until well blended, but do not over mix.
7.Scoop the batter into muffin liners.
8.Bake the muffins for 20 to 22 minutes at 160°C.
