How To make Basic Sweet Dough
1 c Very warm water (105 F to
-115F) 2 pk Active dry yeast
1/2 c Granulated sugar
1/3 c Instant nonfat dry milk (in
-dry form) 2 lg Eggs, at room temperature
1/2 c Lightly salted butter or
-margarine, at room Temperature 1 t Salt
5 c All-purpose flour (up to 5
-1/4 cups)
Combine the water, yeast, and sugar in a large mixing bowl. Let stand for 2 minutes. Add the dry milk, eggs, butter, salt, and 2 1/2 cups of the flour. Mix until smooth, then beat for 2 minutes. Stir in enough of the remaining flour to make a soft dough. Turn the dough out onto a well-floured surface (using some of the remaining flour) and knead for 6 to 8 minutes until smooth and elastic, adding only as much flour as needed to prevent the dough from sticking. Place the dough in a greased bowl; turn once to bring the greased side up. Cover and let rise in a warm, draft-free place until doubled in volume, about 1 1/2 hours. Punch down the dough and turn out onto a lightly floured surface. Use this Basic Sweet Dough to make: Cinnamon Twist Scandinavian Almond Ring Honey Almond Twist A delicate, not-too-sweet dough that lends itself admirably to toppings and fillings made of fruits, nuts, and spices. It can be shaped into twists, rolls, rings, and braids. Each of the accompanying recipes calls for half a recipe of the dough. Double the filling if you wish to make two coffecakes, or make two different coffeecakes from one batch of dough. Either way, you can freeze one to use later. How to make Easy Sweet Dough Quick No-Knead Recipe. This dough can be made for variations of sweet bread/buns. Oven temperature: 180°C/350°F for 30 minutes or alternative at 200°C/400°F for 20-25 minutes. An oven may vary.

Easy Sweet Dough
Ingredients :
312g (2.5 cups) all-purpose flour
65g (5 tbsp) fine sugar
1/2 tsp salt
7g (1¼ tsp) dry yeast
1/2 cup + 1/4 cup of warm milk, add in two separate additions (187ml in total)
1 large egg, whisked
42g (3 tbsp) soft butter
If you do not like the sticky dough, please skip the addition of 1/4 cup milk. In this case, you have to knead the dough until smooth.
NOTE for my measurements :
1 cup all-purpose flour = 125 grams
1 cup milk/water = 250 ml
Egg substitute alternative: for one egg :
• 2 tbsp water + 1/2 tsp oil + 1/2 tsp baking powder + 2 tbsp flour. Stir until combined and mix with other ingredients for the dough.
• Flax seeds: 1 tbsp ground flaxseed + 3 tbsp water. Stir and let sit for 15 minutes. (for suitable bread recipe), grain bread.
• 1 tsp baking soda + 1 tbsp white vinegar + 1 tbsp water. Mix into the dough ingredients. (fluffy)
• A half of a ripe banana (for suitable flavor)
• ¼ cup of pureed fruits (moist): apple, apricot, prunes, avocado, pumpkin (for baking something where the flavor is suitable)
I use a digital scale. If you are using a digital scale, please make sure that your batteries are full/new. Old batteries cause measurements inaccurate
