Reel Flavor - Feta-Basil Bread
This recipe was surprisingly great. My friend, Kim, bought me an awesome gluten-free cook book for Christmas called Gluten-Free Made Simple. I'm trying to face my fears of gluten-free baking, and I must say I followed this recipe and it was a success! I am really proud of myself on this one. Baking is not my forte, but the outcome of this bread recipe has given me a little more confidence. This recipe would even taste good to all of you gluten eaters out there - it's just that good!
Ingredients:
1/4 cup fresh basil, chopped
1/4 cup sundried tomatoes, chopped
1 cup crumbled feta cheese
2 cups all-purpose gluten-free flour
3 tbsp sugar
2 1/2 tsp baking powder
1/2 tsp salt
3/4 cup whipping cream or heavy cream
1/3 cup half and half or light cream
1/3 cup canola or vegetable oil
1 egg
