Italian Burger With Basil Parmesan Olives And Italian Bread
To follow on from yesterdays lamb burger, today I have designed an Italian Burger. This is full of those traditional flavours of Italy like basil, parmesan cheese and olives all packed inside Italian bread. Again this only takes 10 minutes to make.

Basil Garlic Parmesan Sour Dough Bread
Starter Dough:
½ cup of lukewarm water
¼ teaspoon of yeast
¾ cup of flour
Main Dough:
All of your starter dough
½ c of lukewarm water
3/8 teaspoons of yeast
½ tablespoon of sugar
1 tablespoon of minced garlic
½ tablespoon of basil
¾ teaspoon of kosher salt
¼ cup parmesan cheese
2 cups of flour
1. To make your starter dough, stir in water, yeast, and flour until it makes a paste or a thick pudding like substance. Cover with plastic wrap and let rest for about two hours.
2. For the dough, stir down the starter dough with a spatula. Add water, yeast, sugar, garlic, basil, salt, and cheese. Gradually stir in flour. If it’s clumpy, that’s okay! Once it’s all mixed let it rest for 10-12 minutes.
3. Knead the dough on a floured surface for 10-12 minutes.
4. Place dough in a lightly greased large bowl, cover with a towel or plastic wrap, and let the dough rise for two hours until it is doubled in size.
5. Deflate your dough gently. When you do this, it will be much fluffier and have more volume like sour dough bread.
6. Place on a lightly dusted floured baking sheet, or you can place in a lightly dusted bread pan if you want to go for the traditional loaf.
7. Cover bread gently with lightly greased plastic wrap and let rise until it is double in size for about 1 hour.
8. Preheat oven to 475 degrees.
9. Dust loaf with flour.
10. Bake for about 25-30 minutes until golden brown
Avocado Egg Salad
2 hard-boiled eggs, chopped
2 hard-boiled egg whites, chopped
1 Jumbo , Fresh California Avocado, pitted and peeled
1 Tbsp. plain Greek yogurt
1 Tbsp. fresh lemon juice
2 Tbsp. green onion, chopped
1/4 tsp. brown mustard
Salt and freshly ground black pepper, to taste
1. In a medium bowl, combine the hard boiled eggs, egg whites, avocado, Greek yogurt, lemon juice, green onion, and Dijon mustard. Mash with a fork until you reach desired consistency. Season with salt and black pepper, to taste.
