12 Tortillas; * see note
3 c Pinto beans, canned; rinsed
2 c Brown rice, cooked
1 c Green onions; chopped
Enchilada sauce: 2 c Tomato sauce; ** see note
3 c Water
1/4 ts Garlic powder
1/2 ts Onion powder
3 tb Chili powder
4 tb Cornstarch; *** see note
Preparation Time: 2:07 This may be made without the brown rice; use 5 cups mashed cooked and drained beans instead. The sauce can also be used in other Mexican recipes. To make the enchilada sauce combine all ingredients in a saucepan and cook, stirring constantly, until the mixture boils and thickens, about 7 minutes. Preheat the oven to 350 degrees. Spread 1 cup of the enchilada sauce in the bottom of a covered casserole dish. Take one tortilla at a time and spread some beans, rice, and scallons down the center. Roll up and place seam-side-down in the casserole dish. Repeat until all ingredients are used. Pour the remaining enchilada sauce over the rolled-up tortillas, cover, and bake for 30 minutes. Easy flour tortillas recipe -

Bake temp: 380 Degrees (F)
bake time: 20-22 minutes
Ingredients
Flour tortillas
2 cups cheese (freshly grated Med cheddar & Mozzarella)
Filling
1 Pound ground beef (80/20)
2 medium potatoes, cubed
1/2 medium onion, chopped
2 garlic cloves
1/2 Tbsp Mexican oregano
2 tsp salt
1 tsp ground cumin
1 tsp black pepper
Chili Sauce
2 Tbsp oil
10 to 12 guajillo chiles (remove stem and seeds)
3 cups of water
4 Oz. tomato sauce
1 1/2 Tbsp chicken bouillon (Knorr natural chicken bouillon)
2 Tbsp AP Flour
4 Chiles de Arbol (optional for Xtra Spice and flavor)
-this recipe is good for up to 4 cups water
Toppings- lettuce, sour cream, cotija cheese, pickled onions, and avocado
-if you freeze your burritos- Make sure to thaw for 30 minutes-
- Place a foil over the baked wet burrito and bake for 30 minutes
-Remove the foil and bake another 10 to 15 minutes

Easy Bean Burrito Casserole
Ingredients:
1 can (16 oz) refried beans
1 cup salsa
1 cup cooked rice
2 cups shredded cheddar cheese, divided
12 flour tortillas (6 inches)
Topping to taste: lettuce, sour cream, salsa, etc.
Directions:
1. Preheat oven to 375- degrees. Grease a 13x9 casserole dish and set aside.
2. Combine the refried beans, salsa, cooked rice, and 1 cup of cheese in a large bowl. Stir well.
3. Spoon 1/3 cup of the bean mixture onto each tortilla. Fold sides and ends over the filling and roll up. Place each burrito into the casserole dish.
4. Sprinkle the remaining 1 cup of cheese over the burritos.
5. Cover the casserole with foil and back at 375 degrees for 20-25 minutes or until heated through.
Serve the burritos immediately with your choice of condiments.
Cooked chicken or beef can be added to the bean mixture to make this a more hearty meal! That's what's for dinner!

Ingredients:
- 2 packages frozen bean and cheese burritos
- 1 can mild red enchilada sauce
- 1 can mild green enchilada sauce
- Shredded cheese
- Sliced black olives
- Sour cream, for topping
- Salsa, for topping
Instructions:
1. Preheat oven to degrees noted on frozen burrito package.
2. Add frozen burritos to glass baking dish.
3. Cover completely with each can of the enchilada sauces.
4. Top with shredded cheese and sliced olives.
5. Cook as advised on burrito package (usually 45 minutes).
6. Serve with tortilla chips.

Ingredients
1 pound ground beef
1 small onion chopped
10 oz canned black beans drained
2/3 cup corn
¾ cup salsa
1 tsp dried oregano
1 tsp cumin powder
1 tsp garlic powder
salt & pepper to taste
8 flour tortillas 8-inch size
2 1/2 cups shredded cheese mixture of cheddar and jack cheese
Serving - optional
chopped green onions optional
salsa
guacamole
sour cream
Instructions
Preheat oven to 350°F. Grease a 13 x 9 inch baking dish with nonstick cooking spray and set aside.
Place a large nonstick or cast iron skillet over medium-high heat. Add the ground beef.
Stir for 3-5 minutes until the beef is mostly browned. Strained out grease that accumulates.
Add chopped onion, and cook until soft.
Add in black beans, salsa and corn. Add oregano, cumin, garlic powder and salt & pepper. Stir for about 3 minutes.
Spoon about ½ cup of beef mixture to the bottom center of a flour tortilla. Roll up into a burrito shape according to the video.
Place the filled burritos into the pan, seam side down so they don't unravel.
Fill the pan with 8 burritos, and then sprinkle the shredded cheese on top of the burritos.
Bake 18-20 minutes until the cheese is fully melted.
Sprinkle chopped green onions on top. Serve warm and enjoy!
