How To make Bean Burritos
1 cn (16 Oz.) Light Red Kidney
Beans Drained 1 ts Vegetable Oil
1/2 c Chopped Onion
1/2 c Diced Red OR Green Pepper
1 cl Garlic Minced
3/4 ts Ground Cumin
1/2 ts Ground Coriander
1/8 ts White Pepper
1/2 c Frozen Whole Kernel Corn,
Thawed & Drained 4 (8 Inch) Flour Tortillas
3/4 c (3 Oz.) Shredded
Cheddar Cheese 1 c Commercial Medium Salsa
Place Kidney Beans in A Medium Bowl. Mash To Desired Consistency. Coat A Small Nonstick Skillet With Cooking Spray. Add Oil & Place Over Medium Heat Until Hot. Add Onion, Red Bell Pepper & Garlic & Saute 5 Min. OR Until Onion Is Tender. Stir in Cumin, Coriander & White Pepper. Cook 1 Min, And Remove From Heat. Add Onion Mixture & Corn To Beans. Stir Well. Divide Bean Mixture Evenly Among Tortillas, Spreading To Edges. Sprinkle 3 T. Cheese Down Center Of Each Tortilla. Roll Up; Place Seam Side Down On A Baking Sheet. Bake At 425 For 5 Min. OR Until Thoroughly Heated. Spoon Salsa Over Burritos. Serve Warm. (About 353 Cal. Per Burrito And 1/4 C. Salsa. Fat 12.1, Chol. 22)

Easy Bean & Cheese Burritos - A Quick Meal Made Mild Or Spicy
These tasty burritos are quick and easy to make! It only takes a few minutes to mix the refried beans with spices and roll the burritos. Keep them mild or add in your own spices or jalapenos to make them hot. Heat them in the microwave or wrap them in foil and crisp the edges in the oven. I often make a bunch and freeze them in baggies for easy weekday meals. I just take the number of burritos we need out of the freezer and defrost them overnight in the refrigerator, or place them on the counter for a hour before heating in the microwave or oven.
We usually eat them with fresh fruit, fresh salsa and other Mexican-style southwestern foods.

About Burritos
A burrito dish in Mexican and Tex-Mex cuisine consists of a flour tortilla wrapped in a sealed cylindrical shape around various ingredients. The tortilla is sometimes lightly grilled or steamed to soften it, make it more pliable, and allow it to adhere to itself when wrapped. Burritos are often eaten by hand, as their tight wrapping keeps the ingredients together. Burritos can also be served wet, that is to say, covered in a savory and spicy sauce, where they would be eaten with a fork and knife.
Burritos are filled with a savory filling, including a large array of other ingredients such as rice, cooked beans (either whole or refried), vegetables such as lettuce and tomatoes, cheese, and condiments salsa, pico de gallo, guacamole, or crema.
Burritos are often contrasted with other, similar, dishes such as tacos, in which a small hand-sized tortilla is folded in half around the ingredients rather than wrapped and sealed, or with enchiladas which use masa (maize/corn) tortillas and are covered in a savory sauce, to be eaten with a fork and knife. |

Quick and easy refried beans and cheese burrito
All you need is a flour tortilla, some refried beans & shredded cheese.
Warm up the tortilla on both sides, add some refried beans on top, sprinkle on some cheese & then roll it up - quick & easy.
