HOW TO MAKE STUFFED PEPPERS from leftover spaghetti and meat sauce
Is leftover spaghetti turning your fridge into a culinary graveyard? Spice things up with this easy recipe for stuffed peppers. Watch the how-to video and see the recipe below.
Ingredients
• 4 bell peppers
• 2 cups leftover spaghetti noodles
• 2 cups leftover meat sauce
• 1 cup shredded cheese, divided
• 1/2 cup tomato sauce
• 1 tsp red pepper flakes, optional
Directions
Step 1 – Heat oven to 400℉
Step 2 – Slice each pepper just below the stem and remove the top of the pepper. Clean and hollow each pepper by removing the seeds and membranes. If necessary, cut a thin slice from the bottom of each pepper so they all stand up.
Step 3 – In a large stock pot, add enough water to cover the peppers and bring to a boil. Add the peppers and cook for 3 minutes.
Step 4 – Using a food processor, finely chop spaghetti noodles. Add the chopped noodles to a large mixing bowl and combine with the meat sauce and ½ cup of shredded cheese. For a spicier taste, add in the red pepper flakes.
Step 5 – Place each pepper upright in an ungreased 8-inch baking dish. Fill each pepper with noodle and sauce mixture. Once filled, top each pepper with 2 tbsp tomato sauce.
Step – 6 Cover tightly with aluminum foil and bake for 30 minutes. Uncover and add remaining shredded cheese to each pepper. Bake uncovered for an additional 10 minutes or until cheese is melted.
Step 7 – Serve and enjoy!
