How To make Beef Stuffed Peppers with Cheese Sauce
4 green peppers
salt 5 Tablespoons butter
1 pound ground beef
1 small onion -- sliced
pepper 1/4 cup whole wheat or white flour
2 cups milk
1 cup diced Cheddar cheese
Split the peppers lengthwise and remove seeds. Parboil the peppers in a small amount of boiling salted water for about 5 minutes. Drain well. In a skillet melt 1 tablespoon of the butter and cook the beef and onion, breaking up the meat with a fork, until the meat loses its red color; pour off excess fat. Add 1 teaspoon salt and a dash of pepper. Fill the peppers with the mixture and arrange them in a shallow baking dish. Melt the remaining butter and blend in the flour. Gradually add the milk and cook, stirring, until thickened. Stir in the cheese and season to taste. Pour sauce over the peppers and bake in a preheated 350 oven for about 30 minutes. Makes 4 servings.

6-8 Bell peppers, cleaned
1 cup diced onions
1/3 cup oil or butter
2-3 minced garlic cloves
*Begin frying the onions & garlic in about 1/3 cup of oil
Ingredients for Sauce
1/3 cup oil
6-7 Tablespoons of All Purpose flour
1 Tablespoon paprika
3 teaspoons of tomato paste
2 litres of boiling water
*Add above fried garlic & onions
*Add favourite spices & seasoning; 1 tsp garlic powder, salt & pepper to taste
Meat stuffing/filling
1 pound ground pork
1 pound ground beef
2 cups partially cooked arborio rice
2 eggs
3 Tablespoons fried onions
1 tsp fried garlic
1 tsp paprika
salt & pepper to taste
* Stuff peppers with meat mixture
*Add stuffed peppers to sauce and cook on low for about 45 minutes to 1 hour
* Serve over a mashed potatoes

Tops of bell peppers
Chilli peppers or scotch bonnet (optional)
2 spring onions
Salt and pepper to taste
Parsley
1 tsp all purpose seasoning / or Cajun seasoning
2 tbsp oyster sauce
2 tsp smoked paprika
1/2 cup chicken stock (or water)
1 cup sweet corn / peas etc (put your preference)
1 1/2 cup cooked rice
Mozzarella cheese (or cheese of choice)
for topping the peppers
Fresh parsley as garnish
Bake for 15-20 minutes on 180•C - 200•C
