4 boneless skinless chicken
: breast halves 4 TB Chef Paul Prudhome's Poultry
: Magic 4 TB butter
melted
1/2 lb linguini
6 TB butter
1/2 c half and half
1 ts cayenne pepper
: chopped tomatoes :
for : garnish : chopped green onions -- for : garnish Cook linguini until al dente, drain and set aside. Preheat iron frying pan on gas grill at high heat for 20 minutes. Put poultry magic seasoning in shallow
bowl. Put melted butter in a second shallow bowl. Dip chicken first in butter on both sides, then in poultry magic. Place in preheated frying pan and cook 5-6 minutes on each side.
While chicken is cooking, melt remaining 6 Tbs. butter in a dutch oven. Add half and half and cayenne pepper. Heat over medium heat until mixture bubbles. Add linguini. Cover and reduce heat to low. Remove chicken from frying pan and slice into thin strips. Serve over hot linguini noodes and garnish with tomatoes and green onions. Recipe By : Cassandra Gray - MBMH

When I make it I love using a mix of blackened and cajun seasoning to enhance the flavor of the chicken. 1 cup Chicken Broth

High Protein Creamy Chicken Alfredo! 542 Calories | 65g protein | 47g carbs | 12g fat
One of my new favourite pasta recipes, so simple, delicious and a perfect way to satisfy your creamy pasta cravings while on a weight loss journey!
Chicken marinade:
• Chicken breast cut in halves (roughly 300g raw weight)
• 1 tbsp garlic powder
• 1 tbsp Italian herbs
• 1 tbsp paprika
• 1 tsp onion powder
• tsp salt & pepper
• 1-2 tsp olive oil
Mix well
Cook for 5 mins on each side! Medium heat
Pasta:
• 120g uncooked pasta (roughly 240g cooked weight)
• 1 tsp salt
Creamy sauce:
• 200ml low fat milk
• 100g light cream cheese (i use lightest Philadelphia)
• 20g parmesan or shredded mozzarella
• 1 tsp Italian herbs
• 1/2 cup pasta water
Once added to the pan, bring to a light boil then lower the heat and add the cooked pasta and chicken
• Garnish with parsley & parmesan
This recipe makes 2 servings!
Macros per serving:

Cajun Chicken Alfredo

Ingredients
4 (5-ounce) boneless, skinless chicken breasts
1 cup blackening spice (recommended: Paul Prudhomme's Chicken)
2 tablespoons extra-virgin olive oil
3 tablespoons minced garlic
1 cup roughly chopped marinated sun-dried tomatoes
1/4 cup white wine
3 cups heavy cream
3/4 cup grated Parmesan
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
1 pound cooked fettuccine
1/2 cup sliced scallions
Directions
Preheat the oven to 350 degrees F.
Dredge the chicken breasts in the blackening spice and place in a cast iron skillet over very high heat. Blacken both sides of the chicken and place in the oven for 10 minutes, or until internal temperature of chicken reaches 165 degrees F on an instant-read thermometer. Slice in strips on the bias and set aside.
In a saute pan over medium heat, add 2 tablespoons of extra-virgin olive oil. Add garlic and lightly caramelize. Then add the sun-dried tomatoes and the chicken slices. Deglaze the pan with the white wine. Add the heavy cream, increase the heat to a simmer, and reduce the cream sauce by half.
When the cream sauce is to desired consistency, stir in 1/2 cup Parmesan, salt, pepper, and pasta.
Nest the pasta on large rimmed plates, pour sauce over pasta, and garnish with scallions and the remaining 1/4 cup Parmesan.

4 Cheese Blackened Chicken Spaghetti
Blackened Seasoning
Chicken Breast
Cajun Seasoning
Salt
Pepper
Garlic Powder
Onion Powder
Parsley
1/2 block cream cheese
I used 1/2 cup each of these cheese
Pepper Jack
Colby Jack
Extra Sharp Cheddar
I also used one block of Velveeta pre wrapped melts.
2 Cans Fire Roasted Rotel, Or regular
1 Can Cream Of Mushroom
1 Pack Spaghetti Noodles
Olive oil
1 Tbsp butter
1 pint heavy whipping cream, but this depends on how much you’re making! The more you use the more sauce you’ll make. This was enough to feed 5 and fill them up.
