In this episode of Dave's Kitchen (S1E8) we are making us some delicious beef stew. Beef stew with butternut squash is a simple and fast recipe. We make the dish with round tip steak, but you can use stewing beef or any cut of beef you wish. Just keep in mind that the better the cut of beef, the tenderer the meat will be. This is generally a rule of thumb when it comes to just about any meat. I also ensure that the meat is at room temperature before I start to work with it. pinto bean and butternut squash chili:
Ingredients:
* 1.5 cups chopped onions
* 2.5 cups chopped red bell pepper
* 1 minced clove of garlic
* 1 tbsp oil
* 1 lb ground turkey (optional)
* 2 tbsp taco seasoning (or chili powder)
* 2 cups diced butternut squash
* 2-3 cups cooked pinto beans
* 1 can of corn, drained
* 1 can of diced tomatoes
* 1 can of diced green chilies, undrained
Instructions:
1. In a large pot, heat the oil over medium heat. Add onions and red bell peppers and cook until they soften, about 5 minutes.
2. Add minced garlic and cook for an additional minute.
3. If using, add the ground turkey and cook until it's browned and cooked through.
4. Add the taco seasoning or chili powder and stir to coat the ingredients.
5. Add the diced butternut squash, cooked pinto beans, drained corn, diced tomatoes, and undrained green chilies to the pot. Stir to combine.
6. Bring the chili to a simmer and cook until the butternut squash is tender, about 20-30 minutes.
7. Taste and adjust the seasoning as needed.
8. Serve hot and enjoy!
Note: The original recipe is intended for a crockpot, but this recipe has been modified for stovetop cooking.
