How To Make Baked Eggs With Leeks And Mushrooms | Recipe | Well Done
Shiitake Mushroom & Leek Saute
I have a strong affinity for mushrooms - the culinary ones, not the other ones :) I especially love cooking with shiitakes, and this recipe is one of my favorite ways to use them.
It stands alone as a dish on its own, but can also serve as an amazing side dish, or even as a co-star in a dish featuring a bigger protein like fish, tofu or meat, if you eat that.
Here is what you will need:
2-3 tbsp EVOO
2 small or 1 large leek, sliced
1/2 small red onion, small dice
1/2 lb shiitake mushrooms, cleaned and thinly sliced
1/2 tsp black pepper
1/2 tsp sea salt
1 tsp dijon mustard
1. Heat up the EVOO in a pan over medium heat. Add the leeks and red onions to the pan, and sauce until translucent (about 5-10 minutes).
2. Add the mushrooms in and sauté for another 5-10 minutes, or until the mushrooms are tender.
3. Toss with salt and pepper, and then add your dijon mustard. Toss to combine. Remove from the heat.
Serve as is, or in any creative way imaginable.
