Broccoli pizza
Broccoli Crust:
1 small head of broccoli 2 eggs1/4 cup parmesan cheese1/4 cup mozzarella cheese1/4 tsp salt1/4 tsp pepper1/2 tsp italian seasoning optionalToppings
1/4 cup pizza sauce1 cup mozzarella cheese
METHOD
Crush the broccoli in a food processor.Put broccoli rice in a large bowl, cover with plastic wrap and microwave for 1-2 minutes. Mix broccoli, eggs, cheeses, and seasoning. Form the pizza crust on the prepared baking sheet. Bake for 10-12 minutes at 400°F/200°C. Add the pizza sauce and cheese. Bake for 5 minutes at 400°F/200°C.

Broccoli & Cheddar Flatbread Pizza - NoRecipeRequired.com
I discovered as kid smothering broccoli with cheddar was a good way to eat it...not days (while I'm a broccoli on it's own fan), that combo is still one of my favorites. Here, I combine the two in a Flatbread pizza recipe.
I finely chop the broccoli and then cook until just barely tender. I also combine it with some caramelized onions, which are a bit sweet, and balance out the bite in the broccoli. Both are combined with some finely shredded sharp cheddar cheese, spread on some lavish bread, and then bake it off in a 400 degree oven (on a pizza stone if possible) for about 9 minutes.
You end up with a perfect flatbread pizza, with a crisp crust, wonderfully flavored toppings.

Roasted Garlic Broccoli & Avocado Tomato Salad paired with Four Cheese Pizza

Roasted Garlic Broccoli // Avocado Tomato Salad paired with DiGiorno Four Cheese Pizza
ROASTED BROCCOLI:
1 pound broccoli crowns, cut into florets
¼ cup extra virgin olive oil
3 cloves garlic, roughly chopped
Salt and freshly ground black pepper, to taste
STEPS
Preheat oven to 375 degrees F.
Add broccoli to a rimmed sheet tray.
Drizzle with olive oil, add the garlic, season with salt and pepper, and toss to coat.
Roast for 20 minutes, until broccoli is tender and beginning to brown.

AVOCADO SALAD:
2 ripe avocados, peeled and sliced
2 pounds multi-colored heirloom tomatoes, sliced in wedges
¼ cup basil leaves
2 tablespoons extra virgin olive oil
1 tablespoon aged balsamic vinegar
Salt and freshly ground black pepper, to taste
STEPS
Arrange the avocados and tomatoes on a platter and sprinkle with the basil leaves.
Drizzle with olive oil and balsamic. Season lightly with salt and pepper.
