Ingredients:
5 lbs broccoli heads, washed
6 ½ cups cold water
4 tsp sea salt
About ½ cup Hevey cream
Black pepper, to taste
Directions:

01:00 Use only broccoli florets for the soup, ensuring they are washed before boiling for 4-5 minutes.
02:15 Drain cooked broccoli but keep the water for blending;

Grilled Broccoli Babycorn Mushroom Skewers In Chilli Garlic Sauce | Chef Sanjyot Keer
Written recipe for Grilled broccoli baby corn mushroom skewers in chilli garlic sauce
Prep time: 15 mins
Cooking time: 25 mins
Serves: 6
For Grilled broccoli baby corn mushroom
Ingredients:
• Boiling water
• Baby corn 1 cup
• Broccoli 1 cup (florets)
• Mushroom 1 cup (cleaned)
• Ginger garlic paste 1 tbsp
• Salt & pepper to taste
• Soy sauce 1 tsp
• Bamboo skewers as required
• Oil for grilling
Methods:
• Set boiling water in wok for blanching the veggies, blanch the baby corn for 7-8 minutes, strain and transfer to ice cold water, in the same boiling water blanch the broccoli for 2 minutes, strain and transfer to ice cold water.
• Strain the ice cold from both the veggies and transfer it to the mixing bowl, add mushrooms, ginger garlic paste, Salt & pepper to taste and soy sauce, mix and coat the veggies well.
• Skew the marinated veggies on the bamboo skewers and grill them by setting a grill pan or normal pan on medium heat, add oil and grill them from all sides until golden brown, this will take about 3-4 minutes. Keep aside for later use.
For chilli garlic sauce
Ingredients:
• Oil 1 tbsp
• Garlic 1 tbsp (chopped)
• Spring onion bulbs 1/4th cup (chopped)
• Green chillies 3-4 nos. (slit)
• Veggies:
1. Capsicum 1 medium size (chopped)
2. Yellow bell pepper 1 medium size (chopped)
3. Red bell pepper 1 medium size (chopped)
4. Spring onion greens 2 tbsp (chopped)
• Soy sauce 2 tbsp
• Red chilli sauce 1 tbsp
• Salt & pepper to taste
• Water 100 ml
• Cornstarch 1 tbsp + water 2 tbsp
Methods:
• Set another pan on high heat, add oil, ginger and spring onion bulbs, sauté them for a minute.
• Further add green chillies and sauté that as well for a minute.
• Further add the veggies and sauté them for a minute, add the soy sauce, red chilli sauce and Salt & pepper to taste, continue to sauté them on high flame for a minute.
• Add water and mix well, further add cornstarch and water mixture and cook until the sauce thickens. Keep aside for later use.
For sautéed onions and cabbage
Ingredients:
• Butter 1 tbsp
• Onions 1 medium size (sliced)
• Cabbage 1 cup (shredded)
Methods:
• Set a pan on medium heat, add butter, onions and cabbage and sauté them for 2-3 minutes.
Assembly
Ingredients:
• Freshly Grilled broccoli baby corn mushroom
• Freshly prepared chilli garlic sauce
• Freshly sautéed onions and cabbage
methods:
• Heat a sizzler pan until its smoking hot.
• Spread a layer of sautéed onions and cabbage on the sizzler plate, then place the grilled broccoli & baby corn skewers over it and finally pour the hot chili garlic sauce.
• Your Grilled broccoli baby corn mushroom skewers in chilli garlic sauce is ready to be served, serve it hot.
*NOTE: If you don’t have a sizzler pan that’s totally alright, you may skip the step of heating the sizzler pan and place the sautéed onions and cabbage directly on a platter and the further procedure remains the same.

Hot Broccoli Dip Video 1 June 28, 2023
2 cups broccoli florets, finely chopped
half a small onion, finely chopped
2 garlic cloves, finel minced
8 oz. block of cream cream, at room temp
salt&pepper to taste
2 tablespoons jalapeno, finely chopped(i used the ones in the jar)(optional)
1 cup of sour cream or plain greek yogurt
2 to 3 tablespoons of mayo
1 cup shredded cheddar cheese
1/2 cup grated fresh Parmesan cheese
Topping:
extra sprinkling grated fresh Parmesan cheese and cheddar
Preheat oven to 375°F.
In a large bowl mix all ingredients together.
Pour in a sprayed 2 quart casserole pan.
Bake for 30 minutes or until heated through.
Remove from oven and let cool for 10 minutes before serving.
Serve with tortilla chips, crackers, or veggies.

TANDOORI BROCCOLI
Preparation time 15 minutes
Cooking time 20-25 minutes
Serving 4
Ingredients
For Marination
½ cup Hung Curd
½ tsp Black pepper powder
½ tsp Black cardamom powder
½ tsp Coriander powder
½ tsp Turmeric powder
Salt to taste
1 tbsp Lemon juice
¼ tsp Degi red chilli powder
½ tbsp Ginger-Garlic paste
1 tbsp Mustard oil
1 tbsp roasted Gram flour
For Washing Veggies
Fresh Water
1 cap Veggie clean
For Blanching Broccoli
Water
Salt to taste
2 medium Broccoli, cut in 4/6 pieces
Iced water
For Tomatoes
2-3 Tomatoes, cut in half
Salt to taste
Black pepper powder to taste
For Chaat Masala
1 tsp Black Cardamom powder
1 tsp Degi red chilli powder
1 tsp Dried Fenugreek leaves
1 tsp Chaat Masala
Other Ingredients
1 tbsp Oil
1 tbsp Mustard oil
Curd
Fresh Coriander leaves
Process
For Marination
In a bowl add hung curd, black pepper powder, black cardamom powder, coriander powder, turmeric powder, lemon juice, salt, degi red chilli powder, ginger-garlic paste, mustard oil, roasted gram flour and mix everything together.
Keep aside for further use
For Washing Veggies
In a big bowl add water, veggie clean then mix it and add the vegetables in it set aside for 8-10 minutes.
Strain and rinse under running water then wipe the vegetables dry and keep aside for further use.
For Blanching Broccoli
In a large pot boil water, salt then add the broccoli and cook it for 1-2 minutes.
Now add it in the iced water and let it cool down.
Remove on a clean cloth and wipe it dry then keep aside for further use.
For Tomatoes
Cut the tomatoes in half, apply some salt and pepper, set aside for further use.
For Chaat Masala
In a small bowl add black cardamom powder, degi red chilli powder, dried fenugreek leaves, chaat masala and mix everything properly keep aside for further use.
For Cooking Tandoori Broccoli
Apply the tandoori marination to the blanched broccoli properly and set aside.
Apply the same marination to the tomatoes and set aside.
Heat two grill pan with oil, mustard oil then place the broccoli in one and the tomatoes in another pan.
Cook for all sides until golden brown then cooked properly on medium high heat.
Remove and serve hot with curd and garnish with coriander leaves.
